Restaurant Revisit: Franschhoek Kitchen at Holden Manz introduces fresh new Chef Julia Hattingh!

Holden Manz Chef Julia Hattingh Whale Cotatge PortfolioJulia Hattingh is the fourth chef at Franschhoek Kitchen since Holden Manz bought the previously named Klein Genot wine estate, and it was renamed after the owners’ surnames.  She is a breath of fresh air, and the restaurant will attract back customers, as Chef Julia settles in and takes the restaurant to a new level.

Security is stricter now, one having to fill in a sheet at the boom, but friendly.   One walks through the downstairs tasting room to get to the upstairs restaurant, and I chose the smaller room with the fireplace. Front of House Manager Cobi Bosch is new, and he and I did not gel at all.  He previously worked at Rhapsody’s at Cape Town International and in Bloemfontein.  I knew that Manager Wayne Buckley would pop in, and I did want to meet Chef Julia, which made me stay.  Cobi also served as the waiter on Monday.   He recommended to a neighbouring table what his favourite dishes are, in guiding them what to order (they ordered a cheese platter to share in the end), but did not offer me this service.   He brought two wine lists, one with Holden Manz wines, and the other with wines from their ‘friends’, being other wine estates in Franschhoek and one in Stellenbosch, telling me that the Chardonnay on the list was sold out already.  He seemed most put out when I requested butter instead of the bottles of Willow Creek extra virgin olive oil and balsamic vinegar, for the slices of olive oil bread which he had brought to the table. Merchants Café, Bizerca, The Millhouse Kitchen, and more restaurants open!

There are few restaurant openings, and restaurant closures are minimal at present, a good sign of some recovery. This list of restaurant news is updated continuously, as we receive information:

Restaurant Openings

*   Merchants Café has opened on Long Street, opposite Merchants on Long, both belonging to Hanneli Rupert.

*   Luke Dale-Roberts, Eat Out Top Chef at The Test Kitchen, has opened a real test kitchen, called The Kitchen of Dreams, a private experimental place to develop new recipes, at the Old Biscuit Mill.  He is also opening a pop-up Pot Luck Club in Swiss ski resort Verbier, at the Hotel Farinet, from 8 December – April, to be run by him, his chef Nicolas Wilkinson, and front of house Selena Afnan-Holmes.

*   Col’Cacchio has opened a new outlet in Westlake, and new ones are coming in Claremont and Hermanus.

*   New Vida é Caffe new branches are to open on Maindean Place in Claremont, at the new Wembley Square 2 development, at The Paddocks, Groote Schuur, and Roeland Street.  Two more branches are planned for Mauritius.

*    Honest Chocolate is opening a second outlet, a ‘production kitchen’ in the Woodstock Industrial Centre

*   Moyo has opened, where the Paulaner Braühaus was in the V & A Waterfront.

*   TRUTH Coffee has opened on Buitenkant Street

*   FEAST is to open where Franschhoek Food Emporium was, in Place Vendome

*   Okamai Japanese Restaurant has opened at Glenwood wine estate in Franschhoek

*   Cavalli restaurant is said to open on the stud farm on R44, between Stellenbosch and Somerset West, this year or next

*   Stables at Vergelegen Bistro has opened as a lunch restaurant in Somerset West.  Its Lady Phillips Restaurant is being given a make-over by Christo Barnard, and will open with a new name Camphors at Vergelegen. The new chef will be PJ Vadas, previously of The Roundhouse in Camps Bay.

*   Chef Johan van Schalkwyk has left the Stone Kitchen at Dunstone Winery, and has opened his own restaurant Twist Some More in Wellington.

*    Chef Bjorn Dingemans has opened The Millhouse Kitchen restaurant on Lourensford wine estate in Somerset West.

*   Down South Food Bar, previously on Long Street, is said to re-open in the Riverside Centre in Rondebosch

*   David Higgs (ex Rust en Vrede) has opened Five Hundred,  a new 30 seater restaurant in The Saxon in Johannesburg.

*   Cousins has opened in the Parliament Hotel, where Il Cappero used to be.

*   No. 6 Restaurant at Welbedacht has opened at Welbedacht/Schalk Burger & Sons wine estate in Wellington, run by the ex-owners of Oude Wellington

*   Café Dulce is to open a new branch in Tygervalley Centre

*   Gourmetboerie has opened at the bottom end of Kloof Street, where Depasco used to be.

*   Kushi Indian Restaurant has opened a branch on Main Road in Sea Point

Restaurant Closures

*   The Kove in Camps Bay has closed down, its space has become part of sister restaurant Zenzero

*   Sinnfull has closed down in Sea Point and Camps Bay

*   Liam Tomlin Food has closed down in Franschhoek

* Planet Green Salad has closed down

*   Illyria in the Eikestad Mall has closed down

*   Freedom Hill Restaurant has closed down.

*   Wale Rose Lifestyle has closed down in Bo-Kaap.

Restaurant staff/venue changes

*  Table Thirteen has reduced in size in Green Point and will open in Paarden Eiland later this year.

*   The V&A Waterfront Food Court is closed for renovations until November.  A sign outside the construction area lists the following businesses moving into or returning to the area: Primi Express, Anat, Carnival, Nür Halaal, Royal Bavarian Bakery, KFC, Boost Juice, Simply Asia, Steers, Debonairs, Subway, Marcel’s, and Haagan Dazs.  Nando’s is also opening.

*   Fyndraai Restaurant will move to another building on the wine estate in November, and will offer fine dining.  The current restaurant will serve light lunches and picnics.

*   Chef Andrew Mendes from ex-Valora is now at Nelson’s Eye restaurant, where they are setting up a lunch section and cocktail bar upstairs.

*   Giulia’s Food Café Restaurant has opened where Miss K was on Main Road, Green Point. Now serve Italian-style lunch and dinner, but have retained some Miss K breakfast and pastry items.

*   Having bought the farm about 18 months ago, Antonij Rupert Wines has taken over the Graham Beck Franschhoek property. They will re-open the tasting room, initially offering all its Antonij Rupert, Cape of Good Hope, Terra del Capo, and Protea wines to taste.  They are renovating the manor house, to which the Antonij Rupert and Cape of Good Hope wines will be moved for tasting at a later stage.

*   Orphanage is expanding into a property at its back, opening on Orphan Street, in December, creating a similar second bar downstairs, and opening Orphanage Club upstairs, with 1920’s style music by live performers

*   MondeVino Restaurant at Montecasino in Johannesburg, the MasterChef SA prize for the next two years, is to be renamed Aarya, and is to be run by Chef Deena Naidoo from November onwards.

*   Bizerca has moved into the ex-Gourmet Burger space in Heritage Square on Shortmarket Street.

*   Marcellino’s has changed its name to EuroHaus, with a Zerban’s style restaurant added to the bakery.

*   Crêpe et Cidre has closed down in Franschhoek. Gideon’s The Famous Pancake House has opened in its space.

*   Brampton winetasting bar on Church Street, Stellenbosch has trebled its current size

*   Chris Marais is the new chef at Blaauwklippen, previously with The Oyster Box

*   Phil Alcock is the new chef at Two Oceans Restaurant at Cape Point, having previously worked at The Cape Grace, The Showroom, maze, and more

*   Albert van der Loo, previously with Le Coq and Dieu Donne restaurants in Franschhoek, is the new Head Chef at Oude Werf Hotel in Stellenbosch.

*   Chef Emile Fortuin, who was at Reuben’s Robertson for a very short time, has left and moved to Tokara

* Camil and Ingrid Haas (ex Bouillabaisse and Camil’s) have returned to Franschhoek, with the view to get involved in a restaurant

*   Chef Cheyne Morrisby has left the Mantella Group (owners of Blake’s and ex-Opal Lounge), and is starting his own pop-up restaurant.

*   Tiaan van Greunen is the new Executive Chef at Reuben’s at The Robertson Small Hotel, after the departure of Emile Fortuin

*   Alex von Ulmenstein is the new Restaurant Manager at Indochine, at Delaire Graff Estate.  Raymond Brown has left Reuben’s Franschhoek, and is the new Maitre’D at Indochine.

*   Zelda Oelofse is the new Manager of Harvest Restaurant at Laborie, having taken over from Yolanda Prinsloo.

*   Maryna Frederiksen is the new Executive Chef at The Franschhoek Kitchen at Holden Manz.

*   The ex-Caveau owners are said to be taking over the running of the Twankey Bar of the Taj hotel.

*   Sand at The Plettenberg hotel has changed its name to Seafood at The Plettenberg.

*   Lasse Presting is the new Manager of the Haute Cabriere restaurant

*   Chef Alistair Lawrence has taken over from Fernando Romano at 5 Rooms at The Alphen Hotel

*   De Oude Bank Bakkerij is expanding, and will open a retail section selling charcuterie, fresh meats, home-made ice cream, and wines, collectively called De Companje, from February

*   Taste restaurant has moved to Bilton Wines

*   Bar1 has opened where Sunbird Bistro was in Camps Bay.

*   Tamboers Winkel has opened on De Lorentz Street, just off Kloof Street, Gardens (photograph)

*   Luke Dale-Roberts, Eat Out Top Chef, is to open a real test kitchen, called The Kitchen of Dreams, a private experimental place to develop new recipes, at the Old Biscuit Mill

*  Chef Luke Dale-Roberts is opening a pop-up Pot Luck Club in Swiss ski resort Verbier, at the Hotel Farinet, from 8 December – April, to be run by Chef Luke, his chef Nicolas Wilkinson, and front of house Selena Afnan-Holmes.

*   Col’Cacchio has opened a new outlets in Westlake, and a new one is coming in Claremont too.

*   A new Vida é Caffe has opened on Prestwich Street, and a new branch is to open on Maindean Place in Claremont, and one in the new Wembley Square 2 development.  Two more branches are planned for Mauritius, it is said.

*   Richard’s Supper Stage & Bistro has opened its dinner theatre, performing ‘Kaapse Stories’, on Main/Glengariff Roads in Sea Point, owned by Richard Loring and Roland Seidel

*    Honest Chocolate is opening a second outlet with a ‘production kitchen’ in the Woodstock Industrial Centre

*   Moyo is to open where the Paulaner Braühaus was in the V & A Waterfront in summer.  It has taken over the tearoom at Kirstenbosch already.

*   Josephine’s Cookhouse has opened in Newlands, belonging to the Societi Bistro owners

*    Keenwa has opened the P.I.S.C.O Bar above its restaurants, open Thursdays – Saturdays from 5 pm

*   TRUTH Coffee has opened on Buitenkant Street

*    Liam Tomlin Food Studio and Store at Leopard’s Leap in Franschhoek is opening a Deli, the date to be confirmed

*   FEAST is to open where Franschhoek Food Emporium was, in Place Vendome

*   Deluxe Coffeeworks has opened where Reuben’s Deli used to be in Franschhoek.

*   Okamai Japanese restaurant has opened at Glenwood wine estate in Franschhoek

*   Cavalli restaurant is said to open on the stud farm on R44, between Stellenbosch and Somerset West, this year or next

*   The Slug & Lettuce has opened where Beads was on Church Street in Stellenbosch

*   Stables at Vergelegen Bistro has opened as a lunch restaurant in Somerset West.  Its Lady Phillips Restaurant is being given a make-over by Christo Barnard, and will open in November with a new name called The Vergelegen Restaurant. The new chef will be PJ Vadas, previously of The Roundhouse in Camps Bay.

*   Coopmanshuijs in Stellenbosch is opening a restaurant.

*   Chef Johan van Schalkwyk has left the Stone Kitchen at Dunstone Winery, and has opened his own restaurant Twist Some More in Wellington.

*    Chef Bjorn Dingemans is to open up The Millhouse Kitchen restaurant on Lourensford wine estate in Somerset West.

*   Grilleri (ex-Mediterrea) has closed down, and Chef Shane Sauvage (ex-La Vierge) is now heading the re-named La Pentola restaurant.

*   Ali Baba Kebab (renamed from Laila) has opened as a small beef and lamb kebab take-away and sit-down outlet, next door to Codfather in Camps Bay

*   Gibson’s Gourmet Burger and Smoked Ribs has opened as a 70-seater restaurant in the V&A Waterfront, taking part of the Belthazar space. Owned by the Belthazar/Balducci group.

*   Giorgio Nava is said to be re-opening his Down South Food Bar, previously on Long Street, in the Riverside Centre in Rondebosch

*   Ou Meul Bakery from Riviersonderend is said to be opening a bakery in Long Street

*   Deluxe Coffeeworks has opened a roastery at 6 Roodehek Street to service all its outlets

*  Table Thirteen has reduced in size in Green Point and will open in Paarden Eiland later this year.

*   The V&A Waterfront Food Court is closed for renovations until November.  A sign outside the construction area lists the following businesses moving into or returning to the area: Primi Express, Anat, Carnival, Nür Halaal, Royal Bavarian Bakery, KFC, Boost Juice, Simply Asia, Steers, Debonairs, Subway, Marcel’s, and Haagan Dazs.  Nando’s is also opening.

*   Chef Darren Badenhorst is the new Executive Chef at Grande Provence.

*   Chef Shaun Schoeman of Fyndraai Restaurant at Solms Delta has the amazing honour to be working at Noma in Copenhagen for two weeks.  Fyndraai will move to another building on the wine estate in November, and will offer fine dining.  The current restaurant will serve light lunches and picnics.

*    Reuben’s, which was said to be moving its Franschhoek branch, appears to be staying at its existing venue.

*   Emile Fortuin has been appointed as Executive Chef at Reuben’s Robertson

*   Josephine Gutentoft has left Grande Roche, and has moved to Makaron at Majeka House as Restaurant Manager and Sommelier.

*   The Reserve has changed its name to Reserve Brasserie. Seelan Sundoo, ex Grand Café Camps Bay and ex La Perla, is the new consultant chef and GM.

*   Café Dijon has closed its restaurant on Plein Street in Stellenbosch, and has opened in the Rockwell Centre in Green Point, Cape Town, opposite Anatoli’s, in which Camil Haas once had his Bouillabaisse restaurant.

*   Chef Andrew Mendes from ex-Valora is now at Nelson’s Eye restaurant, where they are setting up a lunch section and cocktail bar upstairs.

*   Miss K Food has closed down in Green Point. The new owner Maurizio Porro, with his chef Ernesto, has kept the staff and furniture, and most of the menu initially. They are now called Guilia’s Food Café Restaurant, and they are open for Italian-style lunch and dinner as well, but have retained some Miss K breakfast and pastry items.

*   Rob and Nicky Hahn have left Proviant in Paarl, and now run eat @ Simonsvlei on the Old Paarl Road

*   Karl Lambour is the new General Manager of Grande Provence.

*   Virgil Kahn is the new head chef at Indochine at Delaire Graff Estate

*   Having bought the farm about 18 months ago, Antonij Rupert Wines has taken over the Graham Beck Franschhoek property. They will re-open the tasting room in October, initially offering all its Antonij Rupert, Cape of Good Hope, Terra del Capo, and Protea wines to taste.  They are renovating the manor house, to which the Antonij Rupert and Cape of Good Hope wines will be moved for tasting at a later stage.

*   Orphanage is expanding into a property at its back, opening on Orphan Street, in December, creating a similar second bar downstairs, and opening Orphanage Club upstairs, with 1920’s style music by live performers

*   GOLD Restaurant has moved into the Trinity building

*   Opal Lounge has closed down on Kloof Street, and has moved into Blake’s Bar building, renaming it Dinner at Blake’s. A wine and tapas bar has also been opened, called Bar Rouge.

*   Mano A Mano has opened on Park Street, where Green’s used to be.

*   MondeVino Restaurant at Montecasino in Johannesburg, the MasterChef SA prize for the next two years, is to be renamed Aarya, and is to be run by Chef Deena Naidoo from November onwards.

*   Chef Ulli Stamm has left Richard’s Supper Stage & Bistro.

*   Bizerca is moving into the ex-Gourmet Burger space in Heritage Square on Shortmarket Street.

*    Co-owner Abbi Wallis has taken over the running of The Stone Kitchen at Dunstone Winery in Wellington.

*   MasterChef SA runner-up Sue-Ann Allen is joining South Africa’s number one Eat Out Top 10 restaurant The Greenhouse as an intern for a month, from 21 August.

*   Vintage India has moved out of the Garden’s Centre to the corner of Hiddingh and Mill Street, around the corner.

*   Nook Eatery in Stellenbosch has been sold, with new owners taking over in September

*   Crêpe et Cidre has closed down in Franschhoek.  Gideon’s The Famous Pancake House is taking over the main road space in September.

Cape Town

*   Neil Grant, ex-sommelier of Rust en Vrede, has opened Burrata, a new restaurant in the Old Biscuit Mill.  They will introduce a new 3-course food and wine pairing menu at the end of April.

*   Luke Dale-Roberts, Eat Out Top Chef, is to open a real test kitchen, called The Kitchen of Dreams, a private experimental place to develop new recipes, at the Old Biscuit Mill in June

*   Chef Bruce Robertson (ex-The Showroom) has opened Bruce’s Boat House for lunches, in Scarborough

Franschhoek

*   Leopard’s Leap has opened its Tasting room and Liam Tomlin Food Studio and Store outside Franschhoek, and the new Deli will open at the end of June

*    Reuben’s, which was said to be opening a Franschhoek branch in a building off the main road, when his Huguenot Road branch lease expires this year, appears to now be looking for an alternative restaurant venue on the main road, as the building purchase close to Place Vendome appears to have fallen through.

*   Donovan Dreyer is the new Restaurant Manager of Indochine at Delaire Graff.

*   Cheyne Morrisby is the new chef at the Franschhoek Kitchen at Holden Manz

*   Chef Vanie Padayachee has joined Le Quartier Français

*   Okamai Japanese restaurant has opened at Glenwood wine estate

*   Chef Shaun Schoeman of Fyndraai Restaurant at Solms Delta has the amazing honour to be working at Noma in Copenhagen for two weeks in July.  He also shared that Fyndraai will move to another building on the wine estate in November, and will offer fine dining.  The current restaurant will serve light lunches and picnics.

*  Taste South Africa, belonging to Cybercellar, has closed down in The Yard off the main road. They have Tweeted that they are looking for new premises.

Stellenbosch

*    Cavalli restaurant is said to open on the stud farm on R44, between Stellenbosch and Somerset West, this year or next

*   Dorpstraat Deli has opened, where Cupcake used to be.

*   De Oude Bank Bakkerij has opened a bar, serving Bartinney wines, and craft beers.

* David Higgs has resigned as Executive Chef from Radisson Blu Gautrain in Johannesburg (previously with Rust en Vrede).  He starts at The Saxon in Johannesburg in May.

*   Stables at Vergelegen Bistro has opened as a lunch restaurant in Somerset West.  Its Lady Phillips Restaurant is being given a make-over by Christo Barnard, and will open in June, with a new name called The Vergelegen Restaurant.

*   Chef Bjorn Dingemans is to open up The Millhouse Kitchen restaurant on Lourensford wine estate in July

Holden Manz’s Franschhoek Kitchen has an energetic new Chef Cheyne Morrisby

Yesterday I met new The Franschhoek Kitchen Chef Cheyne Morrisby at Holden Manz in Franschhoek for the first time, not having had the opportunity to do so when he owned Cheyne’s in Bree Street before closing it down last year. I was very impressed with the tapas he prepared for lunch yesterday, and their exceptional value for money.  I also chatted to new winemaker Schalk Opperman and to Karl Lambour, the new Holden Manz wine production, marketing and sales director.

Chef Cheyne started at the Franschhoek Kitchen last Tuesday, and was busy making the tapas when I arrived. He told me that they will vary the tapas menu every week, depending on what they have available, and what the clients enjoy.  The tapas feedback will help him to develop his own menu over time, retaining those dishes that have been a particular hit at The Franschhoek Kitchen, which was started by his predecessor Chef Bjorn Dingemans. One senses that he wants to spoil his clients, and the three item tapas portions, at a mere R35, is unbelievable value.  He said that ‘the more one can enjoy, the better’, the policy he wants to offer his clients! Chef Cheyne is Cape Town born, worked at Blues for two years, and a planned one year job in London became an eleven year one, working at the Conran Group restaurants. In this time he cooked for Kate Moss, Kylie Mynogue, and Robbie Williams.  He travelled to the East, including Thailand and Indonesia, and he said that his cooking style is that of the Pacific Rim.  He loves their cooking methods, their simple approach to ingredients, and keeping food simple, fresh, clean and uncomplicated. They use base flavours to give food a good foundation.  He decided to return to Cape Town with his family, wanting them to ‘feel’ Africa, and also wanting to give back to his home country. He set up Cheyne’s on Bree Street, with a R 1½ million Miele kitchen, and one table of 20 seats, around which all his clients enjoyed his cooking.  In retrospect he is happy that he did not open a restaurant in Hout Bay, a difficult suburb in which to make restaurants survive.  He had come to scout a wedding venue for his brother, and looked at Holden Manz.  A week later he came back for an interview, and a week later he started the job.  Chef Cheyne is a very confident and energetic person, not taking any nonsense from anybody he said, and seemed at home in his new kitchen already.   Chef Cheyne lives in Hout Bay, but will spend six days a week on the wine estate to settle in.

Chef Cheyne is working with the existing kitchen team, and he will be allowing each of his chefs to develop their own signature dishes over time. The tapas menu offers six options, written up on a blackboard.  It was hard to choose between the tapas dishes, and each one was beautifully presented.  I started with a prawn tempura, with nice plump prawns, and pea risotto, delicious but a little too salty for my taste.  I had to double check with GM Wayne Buckley if the price quoted at R35 was correct for the three item tapas dish, and he confirmed it.  The beef tataki was served with Asian salad and wasabi mayo, the beef delicately rare, contrasted with the bite of the mayonnaise. The seared duck was served with a honey soy reduction and chilled watermelon, a most unusual combination. Other tapas choices were pork belly served with pea puree and topped with mange tout tempura, chilli salt squid with ponzu mayo, linefish with cucumber noodles and soy, and lamb and sushi rice balls with sesame.  Even though I had already eaten enough, I couldn’t resist trying out the chocolate brownie tapas, small slices topped with a strawberry, and served with an unusual ginger and caramel sauce.

Karl Lambour and I had been trying to meet for a while, and it was luck that he was at the restaurant too.  He lives in Camps Bay, and has a holiday home in Greyton to which he was heading back. He was excited by Chef Cheyne’s positive influence and energy.  Karl was the cellarmaster at Constantia Glen for five years, and worked at Fleur du Cap’s Bergkelder for two years prior to that.  His vision for Holden Manz is to express what the farm is capable of, in using predominantly their Franschhoek grapes and to make Franschhoek a region that becomes synonymous with excellent wines again.  He wants to focus on Holden Manz’s red wine varieties of Shiraz, Merlot, Cabernet Sauvignon, and Cabernet Franc. They will develop their iconic wine Big G even further, adding small amounts of Malbec and Petit Verdot to make the wine a true Bordeaux blend. The new Rosé is doing well. Karl is proud of their terroir, shared with their neighbours La Bri, Boekenhoutskloof, and Stoney Brook, the stony soil giving their wines complexity.  The mountain nearby stops the wind and cools down the temperature compared to other parts of Fanschhoek, where temperatures can exceed 40°C in summer.  They are also looking at what they can do differently in the restaurant, with a Shiraz-themed winemakers’ dinner planned for Wednesday, serving four courses, each paired with a Holden Manz, Mullineux, Eagle’s Nest, and AA Badenhorst Shiraz.  This is the second winemakers’ dinner they have organised.  Karl said that while he is not the winemaker, he is making two wines – a Chardonnay for which he is buying in grapes, and a special Shiraz blend.

Schalk Opperman apologised for his beard and moustache, saying that he is a member of the Franschhoek Moustache Association,  winemaker members having decided to not shave from the first day of their harvest until yesterday.  The competition was won by Jean Smit of Boekenhoutskloof, having grown the biggest moustache in this time.  He said that he originally had mixed feelings about moving to Holden Manz from Rust en Vrede, where he had a secure job for six years, but stood in the shadow of the winemaker. He was pleasantly surprised about the role which he can play in improving the grapes at Holden Manz, having a good structure, and he is working on developing the Holden Manz brand as wines to be reckoned with.   He is a Shiraz maker first and foremost, but sees making blends as a far bigger challenge for a winemaker.  He complimented Karl for his skills in wine marketing and brand building, and is happy that Karl leaves the winemaking to him, but is available to him as a sounding board. They will use their own grapes in winemaking only, only buying in a small quantity of Malbec and Petit Verdot to improve the Big G. They will use barrel fermentation in future, which was not done before, keeping the wine in the barrel for a year and in the bottle for another year.  In two years time the Holden Manz wines will show the effect of the new winemaking production techniques and winemaker, Schalk said.

It was a busy restaurant at The Franschhoek Kitchen yesterday, and the energy generated from Chef Cheyne was reflected by Karl, Schalk, Wayne and the serving staff too. Having been at the Franschhoek Kitchen a week ago, it was incredible what a change the new chef at Holden Manz has made! There is a promise of great things to come, given that this has only been Chef Cheyne’s first week.

It was interesting to note that a number of restaurants and wine estates called said that they were waiting for the delivery of their wood, and would only have their fireplaces blazing from next week onward.

Franschhoek chefs will be cooking (with wine) at ‘Cook Franschhoek’ in June!

A number of hands-on demonstrations by some of the top chefs in Franschhoek will take place over the weekend of 10 -12 June, the chefs sharing their knowledge and passion for their craft, in what Franschhoek Wine Valley is calling ‘Cook Franschhoek’. 

The chefs that have been included in ‘Cook Franschhoek’ are Margot Janse of The Tasting Room at Le Quartier Français, Neil and Tina Jewell from Bread & Wine, Bjorn Dingemans from Franschhoek Kitchen at Holden Manz wine estate, Judy Sendzul from the Salmon Bar, Ryan Smith from Ryan’s Kitchen, Leigh Trout from Mange Tout at Mont Rochelle Hotel, Darren Roberts at Grande Provence, Chris Erasmus at Pierneef à La Motte, Pierre Hendriks of Le Bon Vivant, Matthew Gordon from Haute Cabriere, Adrian Buchanan from Freedom Hill, as well as representatives of L’ermitage, Huguenot Fine Chocolates, Le Franschhoek Hotel, and Franschhoek Country House and Villas.   Each course will accept 8 – 30 participants, depending on the size of the demonstration venue.   Each demonstration will be paired with a Franschhoek wine.  Most, but not all, of the demonstrations will be held at the Franschhoek Kitchen.  The cost per course and the venues will be announced tomorrow, and will be added to this blogpost.

Franschhoek’s best wine estates will participate in ‘Cook Franschhoek’ too, including Franschhoek Pass Winery, La Motte, Grande Provence, Cabrière, Haut Espoir, Anthonij Rupert Wines, Mont Rochelle and Môreson. 

Accommodation will be available at a variety of accommodation establishments over the ‘Cook Franschhoek’ weekend.  Whale Cottage Franschhoek is offering ‘Cook Franschhoek’ participants a special reduced winter rate for the weekend.

Franschhoek is re-asserting its positioning as the Gourmet Capital of South Africa.  While it may no longer have the largest number of Eat Out  Top 10 restaurants, it has just launched the Franschhoek Wine Valley Food & Wine Route, and ‘Cook Franschhoek’ is another demonstration of Franschhoek’s culinary leadership.

POSTSCRIPT 18/3: The Franschhoek Wine Valley has not dotted all its i’s nor crossed all its t’s, and therefore is not yet able to provide cost, chef and venue details, as was promised for yesterday.  Darren Roberts from Grande Provence denies being a participant of the ‘Cook Franschhoek’ programme, not the first time that they have been erroneously listed on a Franschhoek programme, Roberts says. 

POSTSCRIPT 6/4: The program for Cook Franschhoek has been finalised.  Most of the demos will take place at Franschhoek Kitchen at Holden Manz, the exception being those at the Salmon Bar, Le Quartier Français, Allora, and Pierneef à La Motte.  At each demo a chef and a matching winemaker will participate.  Prices range from R 30 for a chocolate tour and tasting at Huguenot Fine Chocolates, to R 225 each for two demos by the Salmon Bar, hosted by Judy Sendzul of the Salmon Bar and Marc Kent of Boekenhoutskloof: a Farmed versus Wild-caught salmon cook-off on 11/6, and a Salmon and Trout Tasting on 12/6.   On average the prices for the other demos range between R100 – R150.   Grande Provence and Le Bon Vivant are no longer participating in the event.  The full Franschhoek chef and winemaker list is as follows:

We have been tracking recent restaurant opening, closure, and restaurant and chef change information in Cape Town and in the Winelands on our Winter Restaurant Specials blog post, but have decided to do an update for those not looking for specials necessarily.  

Restaurant openings

*   La Mouette has opened at 78 Regent Road in Sea Point.  

*    Brio is a new jazz restaurant, in half of the ex-Riboville in town (on the Adderley Street side)

*    Van Hunks has opened at 1 Union Street, off Kloof Street in Gardens

*   Cafe Nood has opened in Wilderness Road, Claremont

*    Ryan’s Kitchen has opened at Rusthof guest house in Franschhoek – the chef Ryan Smith is ex-Mont Rochelle.

*   Luke Dale Roberts, award-winning chef whilst at La Colombe (reaching 12th place on Top 50 Restaurants in the World list), has opened The Test Kitchen at the Old Biscuit Mill in Woodstock.

*   Haute Cabriere under the chef-manship of Matthew Gordon closes on 7 June at the wine tasting venue with the same name in Franschhoek.

Restaurant name-changes/take-overs/chef changes/address changes

*   Leaf Restaurant and Bar has opened where The Showroom/Portofino used to be.  

*   Mason’s Cafe and Grill has opened where Cafe Gainsbourg used to be

*   On Broadway has moved to the New Space Theatre building, and is using the ex-Anytime restaurant space as one of the restaurants its patrons can eat at before the show.

*   Camil Haas, the co-owner of Camil’s in the Cape Royale Luxury Hotel, has left the restaurant (which has since closed down).  He is working for Reuben Riffel at Reuben’s in Franschhoek and at the One&Only Cape Town.  

*   Tank in the old Cape Quarter has changed its name to Aqua.

*   Luke Dale-Roberts is no longer the Executive Chef at La Colombe, but will consult to the restaurant.  

*   Cafe Rouge in Franschhoek has been renamed Chez d’Or.

  Richard Carstens has left Chez d’Or in Franschhoek, and is the Executive Chef and Wilhelm Kuehn the owner of Tokara Restaurant in Stellenbosch

*   Buena Vista Social Club has moved to the top end of Portswood Road in the Waterfront.
