In the latest issue of SARIE KOS (Summer 2020), the reader receives a detailed introduction to the new KLEIN JAN restaurant which Chef Jan-Hendrik van der Westhuizen, of Michelin one-star restaurant in Nice, plans to open in November 2020 at Tswalu Private Game Reserve in the Kalahari Desert. Will Cape Town and Winelands restaurants survive until winter?

 

The only new restaurants which opened last month are Epice in Franschhoek, headed by Chef Charné Sampson, belonging to The La Colombe Group, and located in the former Marigold restaurant; as well as Tindlovu in Camps Bay. This reflects the state of the economy, 2019 being one of the worst years for the restaurant industry.

Chef Peter Tempelhoff announced the opening of a new ‘funky’ restaurant in Cape Town on Kfm over a month ago, but no further details of its name, location, or opening date are known.

*   New draft legislation calls for zero alcohol consumption before driving, with input sought by 27 February.  Alcohol in medicines and fruit could lead to wrongful arrests.

*  SAA has announced that its direct flights between Johannesburg and Mumbai in India will come to an end on 1 April. It will fly to Abu Dhabi, from where passengers will fly with Etihad or Jet Airways to Delhi, Hyderabad, Bangalore, and Madras in India on a codeshare basis. This route cut, combined with the one to Beijing, will help reduce costs for SAA. Ironic is that SA Tourism as well as local tourism players is in India at the moment, on a marketing trip for our country!

Controversial Eat Out 2012 judge Bruce Palling tells SA chefs to simplify their dishes!

Given that the Eat Out Top 10 Restaurant Awards were presented two months ago, and that its controversial international judge Bruce Palling tasted his way around the country five months ago, it was a surprise to see the article he has written about South African cuisine for British Airways Highlife, published yesterday, now claiming to be an expert about our country’s cuisine, wines, and even its accommodation!

The magazine article, which was sent as a scan from London, differs somewhat from the internet version of it, and has some text, but the most interesting part is the restaurants which Palling praised, and those that he slated. The article bills him as an expert on South African cuisine, given that he ate 200 dishes and drank 60 wines at 30 restaurants in Cape Town, the Winelands, Johannesburg, and KwaZulu-Natal in a period of 15 days, to score Eat Out editor Abigail Donnelly’s Top 20 restaurant shortlist.

MasterChef SA episode 8: Iconic SA chicken pie dishes Brandon Law and Babalwa Baartman!

What an exciting MasterChef South Africa episode 8 was last night, and what a super theme, focusing on the iconic South African cuisine, which challenged eight of the Finalists in an Elimination Challenge, and saw the demise of Brandon Law and Babalwa Baartman, two contestants who did not receive much coverage in the preceding seven episodes. Cape Town’s tourism industry should have benefitted from the episode too, with beautiful filming in Bo-Kaap, with Table Mountain as a backdrop.

The 13 Finalists were put to a taste test, with 30 small bowls of ingredients placed on their work stations. They were asked to taste an ‘iconic’ Carrot Cake which Chef Benny Masekwameng had baked, and then choose the 15 ingredients he had included in its baking. Brandon said immediately that he did not have a good track record in identifying ingredients, and looked worried. He added that he had made a carrot cake before, but certainly had not added so many different ingredients. Thys Hattingh was excited when he saw the sugar, knowing it was a cake or a dessert, saying it probably was something he had made before. He started with the foundation of a carrot cake, choosing the base ingredients: carrots, walnuts, sultanas, and more. The carrot cake was praised by the Finalists for its aroma, and some guessed that it contained nutmeg, cinnamon, and fruit.  The Finalists had to choose the ingredients they thought were in the cake, the bottom eight Finalists going into the ‘Elimination Challenge‘, they were told.  It was the second ingredient (walnuts) that caught Thys short, and another seven incorrectly chose sultanas, which were not in the cake. Brandon, Ilse Fourie, Sue-Ann Allen, Jade de Waal, Deena Naidoo, Manisha Naidu, Thys, and Babalwa went into the Elimination Challenge as a result. In choosing a cooking utensil, which matched that of a second Finalist, the eight were paired into groups of two, and had to open a Mystery Box, which contained a directive of where to go to recreate an iconic South African dish, each pair driven to a different destination in the sponsor Hyundai’s vehicles.  They were given 4 hours to meet with the maker of the dish, to taste the ingredients, and to feel the texture.  The makers of the dishes were not allowed to tell them the recipes or give any specific guidelines.  The eight Finalists were told that the makers of the ‘worst dish’ would be sent home, a surprise that two Finalists were set to be eliminated.

Brandon and Babalwa were sent to De Volkskombuis in Stellenbosch, where they met Chef Dawid and were presented with his restaurant’s ‘Meraai se Hoenderpie’, his mother having added the dish to the menu 35 years ago, in honour of one of their chefs at the time. They tasted the dish, described the chicken to be ‘moist and juicy’, covered with a thick and crispy pastry. There were no strong spices, but they detected a taste of sweetness.  On their return, Brandon decided proudly that they would not use puff pastry from the Woolworths Pantry, and that they would make it themselves, a decision which was criticised by Chef Pete Goffe-Wood, in that puff pastry takes two days to be made, he said.  Brandon confidently replied that he knows the short cuts to make puff pastry. They cooked the chicken with bacon, to give it saltiness, as well as mushrooms. Again Brandon told the camera proudly that he came to MasterChef SA to ‘push his boundaries’, and that’s why he chose to make the puff pastry from scratch.  As it does, it shrunk in the oven, and exposed some of the meat. The dish therefore did not look as good as that of De Volkskombuis, and Brandon was told that store puff pastry had been used in the making of the dish at the restaurant. The judges said that the filling had dried out due to the pastry not creating a seal, due to it shrinking.  The dish was not cleaned before presentation, as can be seen in the photograph.

Jade and Sue-Ann were sent to Goedemoed Country Inn in Paarl, where local waterblommetjie bredie expert Tannie Naomi presented her iconic waterblommetjie dish in the 1818 Cape Dutch home, which had housed some of the MasterChef SA production crew, its owner Russian Count Kim Nicolay told me telephonically after the show. Tannie Naomi said that waterblommetjies grow in 60 – 100 cm of water, and are an iconic Boland dish. Kim told me that the phone had rung off the hook after the show last night, for bookings of waterblommetjie bredie, but they are not a restaurant. Back at Nederburg close by, the two Finalists chose bay leaves, salt and pepper, sugar and white wine to cook the lamb.  They left the cooking of the waterblommetjies to last, Chef Pete questioning this, but Jade confidently said that they did not want to overcook it for it to become ‘mushy’!  When served to the judges, they said it was a ‘bit green’, and the dish was shot down for the potatoes, lamb, and waterblommetjies all having been cooked separately, instead of being cooked together, the ingredients not ‘having lived together in the same pot’, they were told.

Ilse and Manisha were sent to the Eziko Cooking and Catering School in Langa, where Chef David presented the dish they had feared, being tripe, both never having prepared it before.  Tripe is a traditional Xhosa dish, served to guests to welcome them, Chef David explained.  The two Finalists described the texture as ‘furry’, and ‘chewy’, and having a salty taste.  Initially they seemed hesitant to taste the dish, but realised that their future participation in MasterChef SA depended on it. Back at the MasterChef SA kitchen, they put the tripe into a pressure cooker.  They had to make phutu pap too, and followed the instructions on the pack.  Chef Benny liked the aroma coming out of their pots, but the two Finalists were worried that the tripe was not yet soft enough and also not as brown as in Chef David’s dish. The judges said that their tripe dish had an identical presentation to that of Eziko, and the tripe was judged by Chef Andrew Atkinson to be ‘not bad’.  Chef Pete liked its texture, but Chef Benny said that the pap did not have the right consistency. But he said that the dish ‘blew me away’, saying that the texture and flavours were right, and therefore they were allowed to join the other five Finalists who did not have to do this Challenge.

Thys and Deena were driven to Biesmiellah, the iconic Cape Malay restaurant in the Bo-Kaap in Cape Town, on a glorious day, and Cape Town was shown off in its glory.  They were presented with Denningvleis, the most popular Cape Malay dish that the Indonesians had brought to this country.  It was described as containing lamb and a ‘watery gravy’. They tasted a ‘sweetness’, nuts, and tamarind.  Being furthest away, they had the longest time to discuss their strategy whilst they were driven back to Nederburg.  Arriving back, their challenge was to balance the sweet (with brown sugar) and sour (with tamarind, but which they could not find in the Woolworths Pantry) of the dish. They added raisins, whereas Biesmiellah had used sultanas. When presented to the judges, their dish was said by Chef Andrew to be ‘nearly there’, to look similar to that of Biesmiellah, that the lamb could have been cooked for longer, and that there was a ‘good balance between sweet and sour’, Chef Pete said.  Their dish was judged to be good enough for them to stay on at MasterChef SA.

In the end two teams did not do well: Jade and Sue-Ann did not ‘marry their dish in one pot’, and Brandon and Balalwa did not follow the judges’ brief of replicating the dish they were allocated. The judges reminded the Finalists that this episode had exposed them to the culinary heritage of our country, and that both teams had fallen short in this Challenge. It was their decision to eliminate Brandon and Babalwa in this episode. Brandon said that cooking is the great passion in his life. Babalwa said that she had had an awesome time at MasterChef SA.  From Twitter it would appear that the wrong team was sent home last night, many Tweeting that it was unfair that Brandon was ‘punished’ for preferring to make his own puff pastry instead of using a prepared one.

The remaining eleven Finalists were given a pep talk by the judges, being told that they were a third way through MasterChef SA, and that it was ‘time to shine’, and to ‘reach out and grab it’! They were challenged: Let’s see it’, referring to one of them becoming MasterChef.

POSTSCRIPT 9/5: I popped in at Biesmiellah today, and the manager told me that they have been overwhelmed by the number of calls of Capetonians who want to taste Denningvleis.  One TV viewer came to them straight after the show last night to eat it!

Restaurant Awards: how do chefs feel about them?

The latest Opulent Living magazine, one of the best lifestyle magazines available currently, and clever about marrying the magazine with a regular e-magazine that is easy to navigate, as well as with a blog, contains an interview with three leading chefs, and all three said that restaurant awards have both negatives and positives attached to them.

The three chefs interviewed were David Higgs of Rust en Vrede, number one on the South African Top 10 Eat Out restaurant list, Margot Janse of Le Quartier Français, and Luke Dale Roberts, previously of La Colombe and now owner of The Test Kitchen and number one Eat Out Top 10 chef in 2009.  All three chefs made it to the San Pellegrino Top 50 Restaurants in the World, Dale-Roberts’ ranking being the best ever South African performance, with his 12th position in 2010.

Acknowledging the  power of restaurant awards, in terms of increased awareness and resulting in bookings, the chefs felt that it created a negative pressure on themselves and their staff prior to the awards events.   “To be honest with you, the less awards, the less stars and all those things that we have to think about, the better our lives are” said Luke Dale-Roberts.   He added that he thought that awarding stars was better, as it means that there are no winners and losers.  Then it is no longer a competition, and one is just competing against oneself, to maintain that star.  David Higgs added that awards place a lot of pressure on chefs.

David Higgs said that he felt that South African cuisine is on a par with international restaurants, but it was felt that service levels were not yet on a par with the food.  All three restaurants work hard at this.  Rust en Vrede is only open five nights a week, and the other days are used for training, hands-on by the chef.   It was felt that South African chefs are not moulded by a particular food style as may happen in Europe, and there is more standardisation and duplication of dishes on European menus (e.g. cauliflower pureé with scallops, or foie gras).   As South Africa does not have a distinctive food style, it gives chefs a far greater opportunity to experiment, and to not be pigeon-holed in their cuisine style. 

All three the chefs focus on local produce, but introduce an imported product on occasion, to share a special treat (e.g. a French cheese, Kobe beef) with their patrons.   The three chefs agreed to sharing supplier names, but felt weary of too much sharing as they are sometimes blatantly copied.   The internet and television have added to the food knowledge of chefs and their restaurants, and David Higgs said that the public are appreciating food better.

Restaurant Review: Bosman’s back on Top 10, fired up, much more friendly!

After having been announced as a Top 10 restaurant a month ago, a sojourn in Franschhoek gave me the opportunity to try Bosman’s for lunch on Monday, and to celebrate a special birthday at dinner last night.   I was amazed at the radical change in the “personality” of Bosman’s at the Grande Roche Hotel in Paarl, from a restaurant that was stiff and unwelcoming on my last visit, to one that bends over backwards, oozes friendliness, and has made some important changes which clearly are paying off, in that Bosman’s is back on the Eat Out Top 10 restaurant list, after a long absence, and it was the joint winner (with Zachary’s at Pezula) of the Diner’s Club of the Year Winelist Awards.   Whilst is offers excellent value for lunch, it probably is the most expensive Cape restaurant for dinner.

The person who is probably most responsible for the changes is the Food & Beverage Manager Alan Bailes, and is now also acting-GM.  He impressed when he contacted me after my last visit to Bosman’s, and was non-defensive in his reaction.   Bailes is so hands-on that he walks the floor and makes time to chat to the restaurant patrons, something I have never seen of a hotel GM before.   He laughed when I said that to him, and he said that he still is the F&B Manager, but even then these are rarely seen inside a restaurant in general.   The restaurant’s flexibility is commendable, in that I overheard Bailes telling other guests that the kitchen can prepare anything for them, with 24 hours notice.

Bailes is one of a number of new GM’s at Grande Roche, after Horst Frehse left, and told me that the most important change that they have made was to cancel their Relais & Chateaux accreditation, without dropping their standards, he emphasized.    They have chosen to use the marketing power of the Mantis Collection to attract business.   The Relais & Chateaux decision came from the unsatisfactory return received for the high cost of the accreditation.  Ironically, Horst Frehse was known as “Mr Relais & Chateaux” when he was the (cigar-smoking) GM of the Grande Roche.   I wrote about Asara Hotel’s recent Relais & Chateaux accreditation, and that it may be dropping the accreditation, having just obtained it with the help of Frehse, who has left and is heading for the Twelve Apostles Hotel as GM next month.   The only local Relais & Chateaux properties are Asara Hotel, Le Quartier Français, Cellars Hohenhort, The Marine and The Plettenberg.  The focus has also been on making the lunch far more casual, and the prices far more affordable.   Whilst the dinner menu is far different to that for lunch, and offers two Tasting menu and a la carte options, the formality has been removed, especially when the restaurant was literally moved outdoors on a lovely 30+C evening.     

The service experienced at both lunch and dinner was outstanding and attentive, Glenroy du Plessis, the Wine Steward who recently was crowned as best in the country by Diner’s Club, and who must be one of the nicest hospitality staff around, spoiling us.  Nothing is too much trouble, and he crosses the line between waiter and wine steward.   The sommelier Josephine Gutentoft recently moved across to Bosman’s, and while we clashed badly at Reuben’s, she was charm herself last night.   Raymond is another manager I know from Reuben’s.    Two German staff gave an extra dimension to service quality.   Charming Restaurant Manager Alessandro de Laco talks with a heavy Italian accent, but can speak French and German, coming from Switzerland.  He and waiter Stefan had come to the Grande Roche earlier this year due to the World Cup.   Waitress Loreen had come to the Grande Roche with her boyfriend, who works in the kitchen, and will stay until April.  Staff look smart in a white shirt and black tie, and black apron. 

There were some rough edges, like Ra-ida getting my booking wrong for the dinner, mixing up the date and the number of persons booked.   I also noticed two broken umbrellas on the lunch terrace, probably due to the wind.   A Manager should have picked this up, given that the Grande Roche is a 5-star hotel.   My pet hate is security and a boom, and while it was perfect for my arrival for lunch, the chap who was on duty in the evening mumbled something about whether we wanted a table for two, but we had made a reservation.  Yet he did not ask for the name.   They are an outsourced service.

My lunch was extremely relaxed, and was probably made so because of the friendly service by Glenroy and Raymond, who were both on duty, and looked after me, together with German waiter Stefan.  

The outside tables have granite tops, and underplates that have a similar look, but these plates are removed before the food is served, so are purely decorative.   Good quality serviettes are on the table, but while mine was clean, it had a stain on it.  An unusually large collection of glasses is on the table, for a lunchtime.   The cutlery shows its age, in being heavily used.  A waitress brought a lovely cool facecloth to the table, a nice way to cool down on the 30 C Paarl day.  Tokara olive oil was brought to the table with a nicely presented plate of three undescribed bread types – baguette, rye and wholewheat – wrapped in a serviette.   The menu is a narrow page, set in a red and black menu holder.   I did not see initially that the winelist was on the reverse.   As a starter I chose a delicious chilled cucumber soup, with two crispy crumbed prawns (R50).  The prawns were brought to the table first, and then a waitress came with a jug of the soup and poured it with far greater style than the asparagus soup I had at the Planet Restaurant at the Mount Nelson recently.    Other starter choices are Caesar salad with chicken leg and quail egg;  Beef Carpaccio; Salmon Trout; Braised Roma tomatoes and mozzarella, all costing R75.   Mixed baby salad with avocado, goat’s cheese and biltong costs R65; and Asian marinated yellowtail tartare costs R70.

Main courses clearly have been kept as close to R100 as possible, and makes the portions a little smaller, not a bad thing for a lunch, especially when one has more than one course.   I ordered the Pan-fried kingklip with pea risotto, beurre noisette foam, and biltong (R95), the biltong not adding anything to the fish dish, and adding a saltiness I would have preferred to do without.  The kingklipwas  firm and well prepared, and the peas in the risotto gave the dish a colourful touch.   A fish knife was served with the dish.  Other main courses choices include Seafood Bowl (R115), Pan-fried prawns with seafood ravioli and Bouillabaisse broth (R115); Linguine (R80), Asian stir fried beef fillet (R140); and Free-range chicken breast (R95).   Dessert options are “Mohr im Hemd” (rum and raisin ice cream), nougat potato ravioli and Amarula Creme Brûlée, costing around R45, and an Exotic Trio at R50, consisting of Creme Brûlée, fruit salsa, and passion fruit sorbet. 

The lunch winelist is short and sweet!  Ten wines-by-the-glass are offered, starting at R40 for Newton Johnson ‘Felicite’ Dry, and peaking at R280 for 87ml of NV Laurent Perrier Brut Rosé.   The Migliarina Shiraz seems expensive at R75 a glass.   Six white wines can be ordered by the bottle, Maison Single Vineyard Chenin Blanc costing R150, while A.A. Badenhorst’s Family White Blend costs R580.   Eight red wines start at R280 for a bottle of Rainbow’s End 2005, up to R650 for a Kanonkop Paul Sauer 2005.

Dinner 5 January

We went to celebrate my son’s birthday today with dinner last night.   The table outside was perfect, was laid with a good quality tablecloth, and three sets of knives and forks as well as a spoon.  A staff member put the serviettes on our laps, an old-fashioned touch.  There were fewer glasses on the table than at lunch.   Glenroy brought an ice bucket, and kept it filled up throughout the evening.    There are no salt and pepper containers on the table, as Chef Roland feels the kitchen should spice the food correctly.  One may request salt and pepper however.

The winelist dominates one’s impressions at Bosman’s, and obviously is the definitive one, judging by its Diner’s Club accolade.  It is a weighty document bound in a grey leather cover, and runs to 62 pages and the hotel’s wine collection exceeds 600 labels, Glenroy told us.  Unfortunately it uses pages that are hooked in, to give flexibility in terms of availability, but a number of these pages had slipped out, making the winelist look just a little unprofessional, despite its impressive collection.   Sommelier Josephine wants to increase this number, by adding smaller producers.   Similarly to the Asara winelist (Frehse probably used that of Bosman’s as the benchmark when preparing the Asara one), the Bosman’s winelist provides a history of the winemaking in this country, describes the winegrowing areas, dedicates a section to South African wine awards, and provides a map of the wine regions.   I joked and said that it would take me the whole evening to go through the winelist alone, and therefore it was recommended that the wine steward advises one about the wines, which is probably what usually happens.   Something I have never seen on a winelist is the name of the winemaker(s).   Obviously regions, vintages and descriptions are provided per wine.

The wines-by-the-glass section spans two pages, and four are MCC sparkling wines: Silverthorn Blanc de Blanes Brut (R85), Silverthorn Genie Rosé (R95), Colmant Reserve Brut (R65) and Graham Beck Bliss Demi Sec (R65).   Laurent Perrier can be ordered in a dinky at R280, and Billecart Salmon Rosé Brut costs R290.  Eight white wines are available by the glass, starting at R 48 for AA Badenhorst Family Secateurs as well as Crios Bride Sauvignon Blanc, and peaking at R70 for Scali Blanc.   The Rosé is by Newton Johnson, at R40.    Six red wines are available: starting at R70 is the Ataraxia “Serenity” and going up to R185 for a Kanonkop.    By the bottle, 25 MCC sparkling wines are offered, starting at R175 for Seidelberg’s Blanc de Blancs Brut at R175, up to R540 for La Motte’s Brut.  There are 42 Shiraz wines listed, Veenwouden “Thornhill” the best priced at R260, and Mont Destin’s Destiny the most expensive at R1150.  

A cold facecloth was brought to the table, to cool one down and to wipe one’s hands, also an old-fashioned touch, but welcome in the heat.   A young waiter came with the bread basket, and offered us a choice of seven breads, the largest choice I have ever seen, and one looked more attractive than the other.  Choices include parma ham and garlic, pumpkin seed loaf, tomato rolls, pretzel rolls and a lovely seedloaf.   Bosman’s is generous with its bread offering, and the waiter came by at least three times.   The bread is served with a collection of three trademark Bosman’s spreads – unsalted butter, lard with garlic and bacon, and cottage cheese with chives.    A gazpacho with white tomato jelly and agar was brought as an amuse bouche, the spicy soup poured out of a jug at the table.  It did not impress me, if one takes an amuse bouche to be a small taste of the chef’s skills.

The menu has a welcome by Executive Head Chef Roland Gorgosilich: “We trust you will have a relaxing and enjoyable evening with us”, the new Planet Restaurant also having such a ‘personalised’ signed touch in its menu.  Gorgosilich is Austrian, and has a low profile.  It is a shame that he does not come out of the kitchen, to chat to the guests.   One can enjoy a 9-course European-style tasting menu at R 660 per person, as well as a reduced “Harmony of the South” menu, 4-courses costing R 520, and 5-courses R580.  This menu is meant to be a representation of South African cuisine. 

For his starter my son had a hot butternut soup (R55) off the a la carte menu, despite the hot evening, which was also poured at the table over three little pieces of braised duck breast.   It was not an exceptional soup, in my opinion.   My foie gras order, billed to be served with Baumkuchentorte, and costing an extravagant R175, was a let down, as the layered cake was barely visible and could not be tasted around the slice of foie gras.   The foie gras itself was wonderful, served with a cherry, and red cabbage puree,  which did not add to the foie grasenjoyment.  Other starter choices include quail (R95); wild mushroom risotto with parma ham, which looked delicious served at neighbouring tables (R75);  poached salmon trout (R105); and poached veal fillet with pan-fried scallops (R155).  

The highlight of the dinner without a doubt was the Fillet Mignon flambee (R200).  It is usually prepared at the table inside, but due to the outsideseating, and the fire danger, we went inside to see Alessandro prepare it for us in the dining room, a most dramatic preparation, especially when the Martellbrandy was added.  The steak was butter soft.   It was served with tagliatelle and mushroom ragout, the most delicious I have had in a long time, simple and focused on providing enjoyment.   An excellent serrated steak knife was served for this dish, barely necessary due to the soft steak.   Other main course choices include Beef fillet Rossini (R285); springbok loin (R210); vanilla milk poached kingklip (R175); pan-fried hake and crayfish (R225); sole and stuffed calamari (R195) and oddly a tomato consommé at R145.  What adds class to the dinner at Bosman’s is another old-fashioned touch – presenting the main course dishes with domes, which the waiters all lift simultaneously at the table.  The waitress then reminds each diner what he/she has ordered, a nice touch.

For dessert, one is presented with a separate menu, to which is added a number of further beverage options.  Strawberry rhubarb, and an interesting sounding peach lavender soup served with chocolate ganache and peanut croquant cost R65; chocolate fondant costs R75; crepe suzetteR80; and a cheese trolley R150, presumably which can be shared.   I had arranged with Alessandro for a surprise birthday chocolate cake, which was decorated with strawberries on the side, came with a candle, and looked beautiful on a glass plate.   We were not charged for this birthday treat.   I had a good cappuccino.    

The bathroom entrance is attractive and luxurious with a beautiful orchid display.  But when one steps inside, the wooden doors are still there, not in keeping with the quality standards of the hotel.   

Bosman’s is not an everyday dinner venue, but one for a special celebration, given how expensive it is.  Yet for lunchtime visits to Paarl it is perfect, as it is affordable and and the food light.   I enjoyed both my visits to Bosman’s this week.

POSTSCRIPT 22/7: Being in Paarl, I popped in at Bosman’s for lunch today.  Once again, I had a problem with the poor quality of outsourced security staff manning the boom.  I was refused entry for lunch at the boom initially, and asked for the phone number, so that I could call.  Instead, the security person decided to call the Restaurant Manager himself, and this caused a traffic jam at the boom!  I was eventually allowed in and welcomed on arrival, and wondered why this had been necessary in the first place.  Thereafter the service was excellent.  I was happy to meet the new GM Anja Bosken,  She told me that they are working hard at increasing the awareness of the Grande Roche, and went onto Twitter last week.   They are also working on being less stiff and more friendly.  Seven members of staff were retrenched before her arrival, she said, and some staff members did not renew their fixed-term contracts.  Bosman’s is very professional, and I enjoyed a main course of kingklip and prawns, with Mediterranean vegetables and seafood ravioli (R95), followed by Apfelstrudel (R45), prices which are very reasonable for a Top 10 restaurant at a 5-star hotel. Alan Bailes and Alessandro de Laco have left the Grande Roche.

Restaurant Review: Pierneef à La Motte is a work of art!

After spending four hours at the La Motte wine estate, during the Franschhoek Uncorked Festival on Sunday, I had to pinch myself to check that the wonderful time I had experienced there had been real.  The pinnacle of the La Motte experience is the new Pierneef à La Motte restaurant, which opened on Saturday.  It is sure to make the Eat Out Top 10 Restaurant list in 2011/12, and gives Franschhoek a new jewel in its Gourmet Capital crown.   It pays homage to the master artist JH Pierneef, and to the historical roots of South African cuisine, presented with a contemporary twist.

I had booked a few days earlier, and found that one of the weaknesses of the new restaurant was the automated switchboard, which put me through to the selected option for the restaurant, but no one answered.  Eventually I got through to the main La Motte switchboard, and a most helpful lady took my booking, first requesting that it be done in writing.  This resulted in my booking having been made for a table indoors.  I asked Hetta van Deventer, the culinary consultant, if I could sit outside.  She did relent eventually, and I couldn’t have wished for a better table, on a wooden deck opening onto a lawn area shaded by mature oak trees, budding with the freshest green leaves.   The restaurant is green in many respects, and I was impressed with how theming was carried through into many different aspects of the restaurant.  The furniture outside almost looks custom-made, with a green woven-effect, giving it a nature-look.  The placemat was in the shape of a vine leaf.  The silver container had a green glass candle holder (as well as beautiful hand-blown glass bottles for the olive oil and balsamic vinegar, and little silver salt and pepper grinders).

The Pierneef name and theme comes from the priceless collection of 44 oils and other works by JH Pierneef (1886 – 1957), which La Motte bought from Pierneef’s 82-year old daughter Marita, who now lives in the United Kingdom.  The work is displayed in a special new building, housing the Rupert Museum, a general art gallery, and the Pierneef art gallery.   Given that Pierneef is synonymous with the pinnacle of South African art, La Motte honoured the artist by naming the restaurant after him, to demonstrate that they wish to follow his high standards.

The Pierneef name and art has also been carried over into a new range of La Motte wines, called the Pierneef Collection. Some of the collection of 1957 Pierneef lino cuts, which Hanli Rupert had received from her father Dr Anton Rupert years ago, have been used for the back labels for these wines.

The restaurant manager Simon Chennells, a charming young man, brought the menu and the winelist to the table.   They are obviously brand new, and look pristine, with bound covers, as if they are books.   Inside the menu is a photograph of Pierneef and his daughter from 1929, and the same photograph has been printed on the back of the high-back chairs standing at the kitchen counter.   The restaurant is large, divided into the kitchen section, which opens onto the outside seating deck, allowing one to see Chef Chris Erasmus (previously with Le Quartier Francais and Ginja) and his team hard at work in the super shiny stainless steel kitchen.   Pierneef’s work has been printed onto the lampshades hanging over the kitchen counter.  The interior restaurant section is separated from the kitchen, and is dominated by three chandeliers from which dangle crockery from the Dutch East India Company, which had brought Jan van Riebeeck to Cape Town.  The chandeliers are in blue and white, orange and white, and black, white and gold.  La Motte had bought the valuable crockery collection from a museum, and had the chandeliers custom-made for the restaurant.   Christo Barnard is the creative interior consultant who did the decor.

I had the incredible luck that Hein Koegelenberg, the CEO of La Motte, came to chat with me, despite it  being a busy restaurant day.  Other than having invited Hein to our next Food & Wine Bloggers’ Club meeting on 22 September, and seeing him in July at Jordan Restaurant with George Jardine,  I had not spoken to him for more than 5 minutes before.  I do not think he knew who I was, and he therefore impressed me even more by sharing his passion for the ‘new’ La Motte so extensively, and even introduced me to his wife Hanli.  No documentation is available yet for the ‘new’ La Motte, which is a pity, and the gems of information I received from Hein were therefore doubly precious.   Hein impressed upon me that it was early days for the restaurant, and requested that I give him feedback about the menu and winelist.   He will read it in this review for the first time.  Hein was such a gracious restaurant owner, that he came to check on me regularly, repeating his request for feedback.   One is impressed with Hein’s warmth and passion, and even more so that he did not mention the cost of the project at all.  This is not about the income that will be generated for La Motte – this is a project that brings pride in South African cuisine art, the return of the Pierneef collection to South Africa being the foundation of the restaurant, with the related buildings housing the Farm Shop, art galleries and museum, as well as the Tasting Centre, and creating what Hein calls a ‘tourism destination’.

The restaurant being new, word had spread about it, and eating there led to a reunion of the most wonderful people during my lunch there.  First, I saw Cyrillia of Bizerca Bistro, who hugged me as if I was a long lost friend.  Then I saw Bernard and Petro Immelman, an old PR client, who own Clouds wine and wedding estate next to Delaire Graff in the Helshoogte Pass.  Then, the biggest surprise of all, was when John Fourie approached my table, and asked if I was “Christine”, a name I was called many moons ago before I shortened it.  I recognised John’s voice, and he reminded me that he had been a Marketing student of mine at Damelin twenty years ago!   He was there with a group of Harley friends, and invited me to join their table.  The whole table tasted bits of my food (they were having sandwiches and wine), especially loving my dessert.

I never had a chance to try the Portuguese rolls and ciabatta, served with farm-style butter, which got left behind on the original table I sat at.  The menu opens onto a welcome page: “Welcome to Pierneef à La Motte Restaurant.  We have pleasure in hosting you and sharing with you our restaurant’s association with one of South Africa’s greatest masters.”  Homage is paid to both Pierneef, and to his daughter Marita, who has become a friend of the Koegelenbergs. “Pierneef’s creativity in portraying the beauty of the South African landscape and architecture has served as a model for this restaurant’s creativity in offering cuisine inspired by centuries of variations on cooking – a unique presentation known as Cape Wine-lands Cuisine”.  After extensive research into the origin of South Africa’s cuisine, or “boerekos”, from Dutch, Flemish, German and Huguenot settlers about 350 years ago, and British settlers 150 years later, about 200 recipes were developed for use in the restaurant over time. The cuisine style really is meant to be “Boland Boerekos”, and the input from Professor Hetta Claassens, author of “History of South African Food”, was sought to select the recipes. Hein says international chefs will be invited to translate these recipes into a contemporary context.  TV cooking will be introduced at the kitchen counter.

The menu is short and sweet, with a choice of 5 starters, 6 mains and 6 desserts. It is signed by Hein and Hanneli, reflecting their personal involvement. Starters are reasonably priced, Koningsbrood soup costing R35, served with braised veal knuckle ‘karmenaadjie’, roasted bone marrow and pot brood; up to R57 for the Trio of boerbok terrine served with roasted swede puree, apple and sultana chutney, and saffron yoghurt balls.  Other options are a Cape Bokkom Caesar salad, Russian fish pie, and Pumpkin, ginger and walnut cheesecake, two of these being vegetarian-friendly.  The mains peak at R 120 for a Fragrant fish curry, and other options include a roasted endive and goat’s cheese tart, Pumpkin seed and almond crusted Franschhoek salmon trout, Pomegranate glazed smoked pork belly, and Impala neck and stewed prune skilpadjie.  I had the Laquered smoked soutribbetjie, served with an interesting combination of pickled tongue, dried pear kluitjies, verjuice poached pear, wilted boerboon shoots and parsnips, and crispy lamb’s liver biltong.  I was fascinated by the biltong, and could not see it on my plate when served.  When asking the manager, he took the plate to the chef, and returned it with more of it – it was finely chopped and sprinkled over the dish, and gave it a distinctive taste, even when chopped to pieces smaller than peppercorns.  The soutribbetjie had a strong smoky braai taste, and overall it was a most unusual combination of tastes.   The menu does not describe the very South African terms, and this could be a weakness.  I also am surprised about the menu’s spelling of “Wine-lands”.  I would think that the information provided by Hein could be added to the menu, to help one appreciate the effort that he and his team have made in bringing cuisine history back to La Motte.

The dessert I chose was called “Breakfast”, a surprise dessert costing R65.  I cheated by asking a waiter to let me into the secret, so that I could choose whether I should have a starter or a dessert.  It was a most wonderful wacky selection of breakfast foods served in a dessert style – miniature banana muffin, ‘Cornflake’ brittle, yoghurt pannacotta, citrus sorbet balls, berry yoghurt sorbet and ice cream, freshly made “Fruit Loops”, all beautifully presented on muesli crumble.  Desserts seem expensive, but an incredible amount of work has gone into the creation of these.  Other dessert options are Brandy chocolate pudding, Engelen kos, Apple and cinnamon tart, as well as two cheese selections, one of them being goat’s cheese only.   My only criticism is that the ‘Breakfast’ dessert seemed very modern and did not fit the historic foundation of the menu.

Children are catered for as well, with chicken fritters and chips, and fish nuggets and chips, at R30.  One is not obliged to eat off the menu, a blackboard offering chicken and lamb sandwiches, at R35 and R45, respectively, using the lovely breads baked and sold in the new Farm Shop.

Hein told me that they grow grapes for their wines in Bot River, Elim, Stellenbosch, Paarl, Macasser, Darling, and in Franschhoek.  In making their wines, they decide which flavours they want each of their wines to have, and therefore use grapes from the terroirs of their different farms in the making of the wine.  For example, the La Motte Shiraz is made to give white pepper, blackberry and red berry flavours.  For the opening of this wonderful facility, the La Motte Hanli R was launched – a 2005 Shiraz that Hein says is in the league of the best Shirazes in the world.  Only 3000 bottles were produced, of which about a third were given away as gifts to the VIP guests who had attended dinners earlier that week, a priceless gift, given that the wine retails at $100!

The winelist runs to 13 pages, and includes the full range of The La Motte Collection and The Pierneef Collection wines, as well as the La Motte MCC Brut (at R235) and the Hanli R, at R845.  Two pages of “La Motte Vinoteque Wines” follow, and do not explain which wines these are, and only vintages and detailed flavour descriptions, for Shiraz, Millennium, and Cabernet Sauvignon, are provided.  Champagnes range from R600 for Pommery, to R965 for Billecart-Salmon Rosé.   Ten Franschhoek MCC bubblies are listed, almost all under R200.   The rest of the winelist features Meridian Wine brands (Hein founded this international distribution company, with leading wine brands such as Meerlust).  Other Rupert family brands (Rupert & Rothschild, and Anthonij Rupert) are also featured, as is the Leopard’s Leap wine range, a mass market brand that was developed by Hein, selling 600000 cases a year.   A small selection of wines from New Zealand, Argentina, Germany and France is also available. Hein is aware of some typing errors in the winelist.  In the Tasting Centre one can choose an unusual Food & Wine Pairing, with a choice of five out of eight La Motte wines, with a specific dish paired per wine, at R195.  The dishes for the pairing also carry the Winelands Cuisine theme.

The wonderful afternoon had to come to an end.  Not only had I received the greatest gift of all – the time Hein Koegelenberg devoted in chatting to me, with Chef Chris joining him later – but I was also given a bottle of the new La Motte Hanli R, something I will keep for a very special occasion.  The La Motte team is to be congratulated for their vision in bringing history back to La Motte and for making it come alive. I’ll be back!

POSTSCRIPT 23/9:  We enjoyed another wonderful meal at Pierneef à La Motte, this time a dinner and inside the restaurant.   I had not paid enough attention on the restaurant interior on my last visit, and was in awe of the Dutch East India Company crockery chandeliers, with a modern interpretation.  Each of them has downlighters built into it, and the way in which the crockery is hung in the chandeliers makes them chime when the airconditioning is on, a most soothing ‘music’ in conjunction with the soft classical background music.    There is a large fireplace, and a lounge seating area, at which one can have coffee.   I saw the Chef’s Table, a separate room close to the kitchen, seating 8, for which Chef Chris will cook his choice menu, at R1000 per head.   In addition to the “Boerekos” menu (which now has definitions of the traditional “Boerekos” items), there were three specials – sweetbreads, an excellent steak served with mushrooms and shiraz chips, and wonderful chicken with sorrel sauce.

POSTSCRIPT 6/3: I met Dutch friends for lunch, and was blown away by a chilled butternut soup, which I had as a starter, both in its presentation, and also by its refreshing antidote to the hot Franschhoek day.   I was however disappointed that I could not taste the advertised crayfish.  Hein Koegelenberg was at the restaurant too, and came to greet my guests.  They were very impressed with his friendliness.   For the main course we all had the pork, a dish which did not blow me away.

POSTSCRIPT 8/3: I took a colleague to La Motte, to show her around, and we had a sandwich as we arrived just on 15h00.  I remember the lamb sandwich prices being R 25 when the restaurant opened about 6 months ago, so was rather shocked when the sirloin and mozzarella sandwich cost R 75, and the salmon and avocado paste one cost R70, served with a small green and parmesan shaving salad.   It did not match what the restaurant stands for in its presentation or its content.  I also was rudely dealt with by the security person Inge when we signed in at the boom – rudeness is not something I associate with La Motte at all.   I was disappointed about the reaction to the feedback I gave Chef Chris about the lack of the crayfish taste in the butternut soup, and he gave me an unsatisfactory reply, saying that European palates are more sensitive to an over-strong fish taste, and therefore he had to tone down the crayfish content!

POSTSCRIPT 26/1/12:  Our dinner tonight was disappointing – tiny table for two, waitress who did not know her desserts, and she sounded a little like a tape recorder.  Grateful to Manager Anne for organising a table, even though they were full.  I am disappointed that the Cape Winelands Cuisine recipe basis of the menu appears to have almost all gone, with only the Bokkom salad and trio of Cape desserts reflecting the origin of the Cape Winelands cuisine.  Enjoyed the steak (a taste of my son’s) and wild mushroom ragout. Very disappointed with ‘Sweetie Pie’ dessert, with hard sugar crystallised crust around soft meringue, on summer fruit and guava cream, the sugar crust being very hard to eat.
