Looking back: 2011 the worst year ever?

2011: what a year it’s been for the world, South Africa, and Whale Cottage – unpredictable, up and down, and a year in which one had to rethink every way in which one has run one’s business and life.  Most would say that it’s been one of the worst years ever!  But despite the tough times, there has been a lot to be grateful for as well.  I have summarised some of the high and low lights of the year:

1.  The knock which tourism took, especially from May – August, in being one of the worst winters ever experienced, had an effect on all sectors of the economy.  Restaurants frantically offered specials to gain cashflow, guest houses went back to dropping rates as they do in winter, and few took rate increases in summer, unlike their hotel colleagues, who suffered poor occupancy too.  More hotels and restaurants closed down than ever seen before. The recession in the UK hit South African tourism and wine sales badly, previously our major source market. From 50 % of our business in the summer months in Camps Bay, the UK business will be no more than 5 % this summer.  High airfares and the crippling UK airport taxes have not helped. The tourism situation was so bad that we wrote an Open Letter to national Minister of Tourism Marthinus van Schalkwyk, as Cape Town Tourism and Cape Town Routes Unlimited were not aware of how bad things were in the Cape, and therefore did nothing to market the region and to help the tourism industry. Cape Town Tourism spent all its energy on Twitter, not yet the medium of communication of our average tourist, and on wasteful promotions, and therefore we did not renew our 20 year membership. The welcome increase in German tourists has not made up this shortfall, but we have been delighted to welcome many more South African guests.   The World Cup has become a swearword, the reality of its lack of a tourism benefit becoming clear. A blessing from Santa has been a much improved festive season, with no snow-bound tourists or strong south-easter wind, as happened last year.

2.  Events are hugely beneficial for business, and the Argus Cycle Tour, J&B Met, and Cape Town International Jazz Festival attracted out of town guests. The U2 and Coldplay concerts helped fill beds and delighted Cape Town audiences.  A fantastic outcome of Coldplay’s performance is that the music video for ‘Paradise’ was filmed in our city, the Boland and the Karoo – no better part of the world could have been chosen for this song!

3.  Cape Town has had an exceptional year, the darling of the world, winning the World Design Capital 2014 bid, Table Mountain being named one of New7Wonders of Nature (amid some controversy and as yet subject to verification), named top destination in TripAdvisor Travellers’ Choice Destination (for what it was worth!), and featuring strongly in the new James Bond book ‘Carte Blanche’.  Our city hotels, especially the Cape Grace and Steenberg Hotel, featured on international top hotel lists. Good news was the sale of the V&A Waterfront to a local company, which is investing in the upgrade of and addition to the country’s most popular tourist destination.

4.   Despite the doom and gloom, there were more restaurant openings, and chef and restaurant staff changes this year than in many years: The Pot Luck Club, Hemelhuijs, Dash, Casparus, Dear Me Foodworld, The Franschhoek Kitchen, Il Cappero, Café Benedict, The Kitchen at Maison, Sotano by Caveau, Knife, De Oude Bank Bakkerij, Ryan’s Kitchen, Caffe Milano, Mozzarella Bar, Cassis Salon de Thé, Power & the Glory, Haas Coffee, Johan’s @ Longridge, Skinny Legs & All, KOS Coffee & Cuisine, Café Dijon @ Zorgvliet, Le Coq, Act and Play Bar at the Baxter, Sunbird Bistro, Societi Brasserie, Jason’s, Bird Café with new owners, Maria’s after a long renovation closure, Toro Wine & Aperitif Bar, Valora, Café Le Chocolatier, Haute Cabriere Cellar Restaurant after a renovation and chef change, Art’s Café, Spice Route, Mitico, Knead on Kloof, Chez Chez, La Bella, 5 Rooms, Terbodore Coffee Bar, Wale Rose Lifestyle, The Black Pearl, Bistro on Rose, Slainte, Babel Tea House, Rhapsody’s, Café Extrablatt, Harvest, McDonalds in the V&A,  The Mussel Bar, The Franschhoek Food Emporium, Makaron, F.east, Bean There Fair Trade, Sabrina’s, Harbour House in the V&A, MCC Franschhoek, Clarke Bar & Dining Room, Roberto’s, French Toast, Saboroso, Mezepoli, Rocca in the Cape Quarter, and Roca in Franschhoek opening their doors, and new suppliers Frankie Fenner Meat Merchants and The Creamery opening too.

5.  Sadly, the recession was noticeable as it hit restaurants, and it was some of the newer restaurants that were badly hit, including What’s On Eatery, The Olive Shack, Bella Lucia, Blonde, Jardine, Caveau at the Mill, Nando’s in Camps Bay, The Sandbar, The Bistro, Restaurant Christophe, Doppio Zero in Green Point and Clarement, shu, Oiishi Delicious Caffe, Hermanos, The Kitchen Bar, Wildwoods, The Green Dolphin, De Huguenot restaurant, Wildflour, Depasco, Kuzina, and 221 Waterfront.

6.  The eating highlight of the year was the tribute dinner to the closing of El Bulli, one of the world’s best restaurants, by Tokara, Chef Richard Carstens excelling in serving a 13-course meal to a packed restaurant on 30 July, earning him and his team a standing ovation.  This meal alone should have made Chef Richard South Africa’s top chef in the Eat Out Top 10 Restaurant Awards, but sole judge Abigail Donnelly proved that she was incapable of handling this new role and responsibility, not only in excluding Chef Richard from her Top 10 list, but also in awarding the new Boschendal Style Award to her client Makaron.

7.   Franschhoek evolved as THE wine region, Boekenhoutskloof being recognised as South Africa’s top winery by the Platter Guide, and La Motte the top wine estate in South Africa by the Great Wine Capitals Global Network.  In the latter competition, Tokara was selected as top wine estate restaurant in the country. The sale of the Franschhoek Graham Beck farm was announced, and the operation closes mid-year in 2012. The winemaking will take place at Steenberg and at Graham Beck in Robertson, while a Graham Beck tasting bar Gorgeous will open at Steenberg in February.

8.   Hermanus was in the tourism marketing spotlight, when miraculously both the committee of the Hermanus Tourism Bureau resigned, and the Cape Whale Coast Destination Marketing Organisation was disbanded by the Overstrand Mayor.  We had written about the self-interest which had been served by the previous leaders of these two bodies in ‘Lermanus’!  A welcome product for Hermanus is the recently created Hermanus Wine Route, marketing of which will be in the capable hands of Carolyn Martin of Creation.

9.   The Consumer Protection Act was introduced in April, and has shown benefits in product deficiencies and returns.  Little effect has been seen for the tourism industry.  The Tourism Grading Council of South Africa tried to change its accommodation assessment standards, which caused a huge outcry.  Despite changing back to what they had before, many accommodation establishments lost faith in the organisation, and have not renewed their accreditation.

10.  The wedding of Prince Albert II and Princess Charlène in July put South Africa in the world spotlight, not only due to the televised broadcast of the wedding, but also as they celebrated their wedding with a second reception, at The Oyster Box in Umhlanga, now the country’s best known hotel.

11.  This year proved that the ‘social’ in Social Media is a misnomer in many respects, but it is the marketing platform which cannot be excluded.  We celebrated the 10th anniversary of our WhaleTales newsletter, the 3rd year of blogging, and our 1000 th blogpost this year.  We are grateful to our Facebook friends and likers, Twitter followers, and blog and newsletter readers for their support.

It is hard to predict 2012, and we will go with the flow.  2011 has made us tougher and even more thick-skinned, we have learnt to change with changed tourism times.  We look forward to a stable world economy, politics, as well as weather in 2012!

Recession impacts on Cape Town and Winelands restaurant openings and closures!

The recession has taken its toll, and a number of restaurants have closed down.  Interestingly, a number of chefs are moving too, an unusually high staff turnover, some of the movements due to the restaurant closures.  It is noticeable that many restaurants which opened earlier this year have closed their doors already.  Despite the recession, new restaurants have opened or are in the process of opening (we have previously listed restaurants which opened and closed earlier this year).  We will update the list of restaurant openings/closures/changes regularly, and welcome contributions:

Cape Town

*    F.east Indian Restaurant has opened on the corner Long and Bloem Streets, in Cape Town

*    Bean There Fair Trade Coffee has opened on Wale Street, two doors down from Honest Chocolate

*    What’s On Eatery on Watson Street has closed down

*    Chef Christo Pretorius, previously of De Huguenot, has started as Sous Chef at 1800 Restaurant at the Cape Royale Luxury Hotel

*     Wildflour has closed down on Regent Road in Sea Point.

*     221 Waterfront has closed down in the V&A Waterfront, and a ‘concept store’ McDonald’s is opening in its space

*   Wale Rose Lifestyle has opened in Bo-Kaap, on the corner of Wale and Rose Street, serving Cape Malay as well as ‘cosmopolitan food’.

*   Andy Fenner (JamieWho?) and friends have opened Frankie Fenner Meat Merchants in Metal Lane, 8 Kloof Street, opposite McDonald’s.  They are stocking Farmer Angus McIntosh’s beef, Richard Bosman’s pork, and eggs and chicken from Simply Wholesome.  A barista will make coffee, and Jason will bake special chorizo muffins and bacon brioche for them.  Saturday markets in the parking area outside may be on the cards.

*   Renamed Blues Beach House restaurant (right) in Camps Bay has re-opened, having been reduced in size by about half, and changed its menu to ‘beach food’*

*   Chef Leigh Trout, ex- Mange Tout at the Mont Rochelle Hotel, has bought Bird Café and Gourmet Eatery on Bree Street, with Kevin Mink.

*    Chef Jacques de Jager, has left Salt Restaurant, setting up a consultancy.  Chef Daniel Botha from Le Franschhoek Hotel has taken over his job.

*   Cocoa Oola has opened on Kloof Street, where Oishii used to be

*   Sommelier Neil Grant, ex-sommelier of Rust en Vrede, is opening Burrata, a new Italian restaurant in the Old Biscuit Mill in mid-February

*  The Olive Shack at Allora in Franschhoek has closed its restaurant operation, and will only operate as a shop selling olive-related products.

* Leopard’s Leap has opened its Tasting room and Liam Tomlin Food Studio and Store outside Franschhoek

* The Kitchen and The Tasting Room has opened on Maison wine estate in Franschhoek, with Chef Arno Janse van Rensburg (ex Ginja, Myoga), and Manager Julian Smith (ex Azure, Grande Provence,  Waterkloof, Pierneef a La Motte) (left)

*   Haute Cabriere Cellar Restaurant has re-opened with new decor, and new chef Ryan Shell.

*    Chef Anri Diener has left Majeka House, and Chef Tanja Kruger from De Huguenot Restaurant has taken over her position

*   Vanessa Quellec has joined Wild Peacock Food Emporium, to promote their Valrhona Chocolates

*   The owners of Sweet have returned to Sweden, and Dimitri has bought it and renamed it Dimi’s.

*   Manager Chris Oliver and Chef Marissa Chandansing of Johan’s@Longridge have left, and will start a new restaurant, details as yet undisclosed

What’s On at What’s On Eatery? A new chef, a new menu to come!

The most exciting restaurant news in Cape Town must be the move of Chef Oliver Cattermole of Dash Restaurant at the new Queen Victoria Hotel, to What’s On Eatery at the end of this month, the ideal marriage of superb host Trevor Jordaan with a superb chef.  The restaurant will be serving food with ‘simplistic elegance’, in a homely and hearty environment, and is set to become even more popular than it already is.

Chef Oliver attracted my attention with his most beautiful ‘Alice in Wonderland’ vegetable garden he created with the beef fillet and mash dish at Dash.  Oliver is a quiet man who is passionate about what he creates, and told me about his plans for What’s On Eatery when we met with Trevor yesterday.  He wants to position What’s On as a small neighbourhood eatery, and is looking forward to lifting What’s On to new heights. He will serve simple food, cooked impeccably, and beautifully presented.  His menu is likely to change monthly, and some of the starters include Prawn cocktail, Roast beef salad, Caprese salad, Mussels with cider (his personal favorite), and Oysters with seaweed.  Mains are likely to include Linefish of the day, Monkfish Masala, Breast of lamb, and Pork belly with apple puree, crackling and black pudding soil.  On the Dessert menu could appear delectable items such as Lemon tart (using the Le Gavroche recipe but with an Oliver twist), Chocolate marquise, a Chocolate plate using chocolate by CocoaFair, and Elderflower berries and custard.  The lunch menu will be lighter, with platters of charcuterie, fish, and cheese, as well as soups and gourmet ciabattas.  Starters will range from R35 – R65, main courses from R95 – R165, and desserts around R40 – R45. Gorgeous sorbet palate cleansers will be served.

Chef Oliver grew up in Durbanville, and worked on weekends for George Jardine at the Cellars Hohenhort hotel whilst he was still at school.  He did a kitchen internship with Matthew Gordon at Haute Cabriére Cellar Restaurant for 2,5 years, and worked alongside Scott Kirton, the La Colombe chef.  Chef Oliver left for the UK, and worked at 2-Michelin star restaurant Le Gavroche, in which kitchen Michel Roux jnr reigned. He said it was tough working in a French kitchen, without being able to speak French, but it did give him a good grounding.  The rule of the chef was ‘my way or no way’!  This kitchen influenced Chef Oliver the most, and he owns ten Roux cookery books, and makes his jus and sauces the Roux way.  In this kitchen they do things the old-fashioned way, and here Oliver learnt discipline, punctuality, time-keeping, and being organised, in a kitchen that was run with ‘military precision’. Here he worked with Phil Carmichael, ex-Maze chef at the One&Only Cape Town.  He moved to The Ivy, one of London’s top restaurants with 400 covers, of which Giles Conran once said: “The most fashionable piece of furniture in London is a table at The Ivy”, and worked there for three years.  This restaurant sees VIP’s such as Tony Blair, Tom Cruise, Julia Roberts, the Beckhams, John Travolta, and Elton John eat good British food here regularly. It is one of the ultimate places to be seen, and serves the ‘best of British’ food, Chef Oliver said.  Even Gordon Ramsay used to eat at The Ivy every Friday evening, having beef tartar, and fish and chips. Oliver worked here as Chef de Partie, and was responsible for the vegetables, one of the hardest sections of this kitchen, the menu offering 37 side dishes.

Novelli’s at The London Capital Club, with Jean Christophe, for whom George Jardine worked, was Chef Oliver’s next employer.  This one-Michelin star restaurant serves refined food with clean and sharp lines in its presentation. Foraging was a trademark of this restaurant.  When most of his colleagues left, Chef Oliver left too, working on a Silverseas cruise liner for six months.  Then he spent 2,5 years at Cannizaro House, which was awarded three rosettes by the UK AA Guide, first as Sous Chef and then as Senior Sous Chef.  Foraging here too was important, and ’boutique’ ingredients were sourced in the preparation of modern British food.  A snowed-in Christmas last year made him decide to return to his home city, and he was offered a job by Newmark Hotels, first at their V&A Hotel, and then at the Queen Victoria Hotel, where he and the team of chefs designed the exciting Dash menu.  Chef Oliver says his job as Chef de Cuisine at Dash has broadened his horizons and pushed his culinary boundaries. Chef Oliver is the son of Nigel Cattermole, a co-founder and partner in Siris Vintners, owner of Wines @ the Mill, and lecturer at Varsity College.

Owner Trevor Jordaan is planning a number of changes to coincide with Chef Oliver’s arrival: the downstairs room will be set up as upstairs, with highback chairs, and some other decor upgrades; the counter will be set up as a bar, and bar snacks will be served, such as home-made biltong; a new awning and signage is planned; Chef Oliver will come out of the kitchen after the service;  the opening hours will change to 9h30 – late, without closing in the late afternoon, Monday – Friday, and on Saturday evenings.

POSTSCRIPT 4/10: I have not wanted to eat at What’s On Eatery until new Chef Oliver has settled in, but could not help ordering the new starter Durbanville Asparagus with coddled hen’s egg and soldiers this afternoon, when stopping by for a coffee, excellent value at R45, and beautifully presented.  I met the new sous chef Wesley, who also worked at Dash, and previously at Jardine.

Condé Nast Traveller guides tourists to Cape Town, with glaring errors!

A ‘Cape Town’ Google Alert two days ago alerted me to an(undated) Condé Nast Traveller  ‘Guide To Cape Town’, a twelve page listing of accommodation and restaurant recommendations, as well as containing suggestions for shopping, what to do, and what to see in Cape Town.  While all publicity is good for our city, it is interesting to read one of the world’s most highly regarded travel magazine’s tourist suggestions, and to note how out of date the guide is, and what blatant errors it contains.  One would have thought that Cape Town Tourism would work with the publisher of such a Guide, to check the accuracy of the content before it is published!

The introduction to the Guide is short and sweet: “With the striking Table Mountain as a backdrop, beautiful beaches and a relaxed and cosmopolitan atmosphere, it is no wonder Cape Town is attracting more visitors than ever.  Fortunately, there are enough stylish and affordable places for every visitor to stay in, ranging from chic boutique hotels in the city centre to out-of-town mansion houses.  The city also boasts historical buildings, interesting museums, shopping malls, restaurants, jazz cafés, theatres and nightclubs. On top of this, there are excellent surfing beaches and charming vineyards along the pristine coastline, and the spectacular Cape of Good Hope 70 km south of the city”.  Two observations: This description of Cape Town says “beauty”, long the positioning for Cape Town, but one that Cape Town Tourism has thrown away for the city, now focusing on ‘Inspiration’ for the city!  Second, the first glaring error is made, in writing about the inaccurate distance of the Cape of Good Hope from the city! 

*  Accommodation establishments are recommended across various price levels, denoted with £ symbols, up to 5 for the most expensive.  Interestingly Newmark Hotels’ Dock House, the Cape Royale Luxury Hotel, and the One&Only Cape Town are denoted at £££££, but the exact rate range is not defined.  However, Dock House dropped its rates by about 28 % recently, which is not reflected.  The Cape Grace Hotel was the city’s second most expensive hotel in the Cape Town hotel rate survey  we conducted earlier this month, but was given a ££££ rate rating by Condé Nast Traveller, as are No 7 Glen Beach, and the Table Bay Hotel.  Even more oddly, Ellerman House was the most expensive hotel in our survey, yet is indicated at only a £££ rate level, together with Ezard House, The Mount Nelson, the Grand Daddy (clearly not in the same price league), the Twelve Apostles Hotel, and POD in Camps Bay.  The Cellars-Hohenhort Hotel is rated at a ££ rate, odd for this very upmarket 5-star hotel, with the Hout Bay Manor, and the Bishop’s Court.  The most affordable rate recommendations are Head South Lodge, Hemingway House, Ikhaya Guest Lodge, Kensington Place, La Splendida, Les Cascades de Bantry Bay, Rosedene Lodge, The Walden House, and Welgelegen Guest House, with vastly varying rates in this most ‘affordable’ category.  We miss the über-trendy new Queen Victoria Hotel in this list. No ‘World Cup hotels’ are listed at all.

*   Restaurant recommendations are even more interesting, being Beluga, Blues (‘one of Cape Town’s best-known eateries’, says the Guide!), The Codfather, La Colombe (‘considered by many to be South Africa’s finest‘), Den Anker, Haiku, Giovanni’s Deli, La Perla, Mano’s, Noon Gun Tea Room & Restaurant, and Tokara (‘lots of springbok and ostrich, but also pasta and seafood’, probably describing the Tokara under the chefmanship of Etienne Bonthuys, who left almost a year ago.  Also, the restaurant is not in Cape Town!).  The list seems old as well as old-fashioned, and does not capture the exciting new city restaurant openings such as The Test Kitchen, Dash, Hemelhuijs, Caffe Milano, What’s On EateryLa Mouette, and Dear Me, and clearly is dated, based on the Tokara description.  Some of the restaurant recommendations included in the list are odd!

*   Nightlife recommendations are Marco’s African Place (for its jazz, and ‘indigenous and international cuisine with a smile’), and Marimba’s Cigar Bar in the Convention Centre.

*   Recommended attractions to see are Robben Island, the Two Oceans Aquarium, and Jazz at the Winchester Mansions, the latter hardly being a tourist attraction!

*   Recommended things to do are Camps Bay beach (except when the south-easter blows, the Guide qualifies), Clifton, walking, the City Bowl (‘a 15-minute drive from Cape Town city centre’!), Fourth Beach (mentioned again, even though mentioned under ‘Clifton’ already), Green Point, and Sea Point. Oddly, there is no mention of going to Cape Point or up Table Mountain, or even to Signal Hill, nor take the popular Hop On Hop Off bus!

*  Shopping recommendations are Belafonte (men’s clothing), Billie Boutique, African Image, Okha, The Plush Bazaar, Dolce and Banana, Olga Jewellery Design Studio, Peter Gilder, Greenmarket Square, the Waterfront Craft Market, and the ‘Victoria & Albert (sic) Waterfront’ (after 20 years of being in existence, this error is unforgivable)!   One wonders if the outlets mentioned are Cape Town’s finest.  A pity is that none of the lovely design outlets on the Cape Town Design Route are mentioned. 

*  In the section of how to get to Cape Town, the Guide does not even get the name of Cape Town Tourism correct, calling it ‘Tourism Cape Town’, on the basis of its web address!  It encourages visitors to visit the Pinnacle Building and other branches.  We urge Cape Town Tourism to provide correct details of its name to Condé Nast Traveller!  The Guide adds in this section: “avoid the tourist influx during December and January, when accommodation is expensive and hard to find, and stay clear of the gales from September – November”!  This is a very scary sentence, and is enough to wipe out the mainstay of the Cape Town international tourist support, with the inaccurate information about the ‘tourist influx’ (a window of 26 December – 3 January only), and the description of the south-easter is exaggerated and the time period mentioned not accurate!

*  A gross error in the Travel Information section is the reference to the languages ‘most commonly spoken’ in Cape Town are English, Afrikaans, Sesotho (!), isiXhosa and isiZulu(!).  It also lists Ascension Day as a public holiday (long been abolished).  Food that is popular is described as meat, especially sosaties (incorrectly described as ‘curried lamb chops’), ‘boerwors sausage’ (sic), and cuts of ‘springbok, kudu, bush-pig and eland cooked over wood coals’, a joke!  Fish, especially crayfish, is also on the menu, and ‘South Africa produces excellent wines, too’, says the Guide  An ‘interesting fact’ listed is that the country used to have two official languages, and now there are 11, it writes!  ‘Compulsory reading’ for future visitors to Cape Town is “Nelson Mandela’s autobiography Long Road (sic) to Freedom”!

The numerous errors and out-of-date information contained in the Condé Nast Traveller  Cape Town Guide are not only unforgivable for such a prestigious and influential travel publication, but are also damaging in their reference to the wind and New Year season.  One wonders whether the compiler of this Cape Town guide ever came to Cape Town, based on the geographical inaccuracies it contains!   Cape Town Tourism’s PR department should urgently address the inaccuracies in the Guide, when it has time in-between its incessant Tweeting!

Cape Town City Centre Restaurant Route: a collection of gems!

Whilst I dislike going into the city centre during the day, due to the irritating parking guards, I am pulled to the city centre more and more due to the ever-growing collection of good restaurants and coffee shops.  This blogpost is a summary of some of Cape Town’s inner-city highlights:

*   Hemelhuijs– owned by interior and restaurant consultant Jacques Erasmus, previously from Manna.  Emphasis is on freshness. Creative unusual menu.  Breakfast and lunch served.  Monday – Friday 8h00 – 15h00.  Saturday 9h00 – 15h00. Open for dinner on Wednesday evenings.  71 Waterkant Street. Tel (021) 418-2042.

*   Dear Me Foodworld – a hot new addition, with a Francois du Plessis decor emphasis on green (both interior colour and herbs grown from the ceiling, see photograph above) and health, with most dishes offered as lactose-free and/or sugar-free alternatives.  Menu changes daily.  Great creative chef Vanessa Marx. Restaurant Review: Valora brave new city class!

For all the doom and gloom in the hospitality industry at the moment, it is refreshing to discover a new restaurant in the center of town, that has raised the bar with a slick and chic new establishment. Valora Café, Restaurant and Bar opened on Monday, where L’Aperitivo used to be, next door to Skinny Legs & All.  Valora means ‘brave’ in Latin, and is one of a number of exciting city centre restaurants to open in the past few months, which include Roberto’s, Dear Me, and What’s On Eatery.

I had noticed the sudden closure of L’Aperitivo a month ago, often driving down Loop Street.  I stopped to have a chat to Chef Andrew Mendes, while the renovations were taking place.  He told me that the restaurant would open on 1 August, and it did!  L’Aperitivo had a large counter, which took a lot of the relatively small space. The Valora counter is smaller, positioned at the back of the restaurant, and has a far more spacious feel about it.  One part of a wall is rough brick, and the rest of it is painted a light gold yellow, the back wall behind the bar is a deep burgundy, while the other two sides have glass windows, letting the welcome winter sun in on a very chilly day, with snow on Table Mountain.  I liked the interior design, understated, chic, with dark wood-top tables, chairs with a white/silver fabric, and bar chars in a light rose burgundy colour. The bar counter has gold design tiles on it.  The decor reminds one of What’s On Eatery and La Mouette. There is no clutter. The shopfitting and interior design was done by Ricci Cinti, who remembered me as his first boss of many years ago. His partner in Epic Ark designed the logo, which has a similarity to that of the Queen Victoria Hotel, giving it a classy feel.  Outside, modern grey garden couches, with a rope to demarcate the Valora space on the pavement, add further class to the establishment.  The owner wanted to create an interior that was ‘sexy and modern, finer dining, offering value for money’. The floor is a laminate that looks like it is made from old wine barrels.  I found it very hot inside, and the waitress switched off the heaters.

Valora has been opened by Mike Mouneimme, who was the operator of Caprice in Camps Bay for ten years, and is the cousin of Caprice owner David Raad.  The family is Lebanese, and this reflects in the Mediterranean style restaurant, which consists of a collection of Lebanese, Italian and Greek dishes.  Chef Andrew worked at Tuscany Beach for more than three years before joining Valora, and prior to this at the previous Avontuur restaurant in the V&A Waterfront, and at Superior Catering, which did the private catering for the Atlantic Beach Golf Club as well as for Pearl Valley.  He was not given much creative freedom at Tuscany Beach, and he is excited about the freedom to develop the menu. Andrew laughed when he said that the restaurant name comes from the bravery in opening a restaurant in these challenging times, and for the small kitchen space he has to cook in.

The cutlery is smart, being Fortis Hotelware, and I loved the special edition LavAzza Calendar 2011 cups with a gold design on them.  The Fortis salt and pepper containers have a yin/yang design, and a ceramic hurricane candle holder was on the table.  The paper serviettes do not match the interior quality, and Manager Lisa said that she is working on getting these changed to material ones.

The menu/winelist has a golden cover, with the logo, and looks inviting and classy.  Inside the pages are in burgundy.  The menu offers an extensive range of items.  For Brunch one can order a baked bagel with salmon and scrambled egg, French Toast, a health breakfast, or toasted Focaccia, all at about R50.  The salad choice includes Lebanese Tabbouleh and Fattoush salads, as well as Tuna, Greek, chicken, and beef salads, ranging from R58 – R78.   Roast beef, cheese and tomato, and spicy chicken sandwiches made with home-made bread cost about R60.  Eleven mezze choices range in price from R12 – R40, and include Lebanese flat bread, Baba Ganoush, aubergine, and Lebanese Kefta kebabs.  Starters included a beautifully presented Two Tone soup, recommended by Chef Andrew, being a clever design of two soups, presented in a yin yang shape, with a rich dark beef soup sprinkled with biltong powder, and a light truffle cream with a hint of chilli, with two prawns, which was served with toasted brioche, costing R50. I enjoyed the deep fried crispy Patagonian calamari rings served with a separate bowl of lemon butter sauce, slices of lime and a sprig of origanum (R40).  Other starters include snails, spicy chicken livers, and stuffed mushrooms, all costing under R50.  Six main courses include a 350 gram rib eye steak (R135), Turkish spiced fillet (R125), beef ragout (R98), Psarri Plaki line fish (R105), chicken Parmagana (R75), and grilled Patagonia calamari (R70).  Pasta includes wild mushroom, ravioli bolognaise, seafood pasta, and Namibian desert truffles, ranging between R70 – R110. The Valora burger costs R55, and a Prego Roll R75.  Desserts cost R50 and less, and include chocolate baklava, berry panna cotta and chocolate truffles.

A small number of wines is offered, with a selection of cocktails.  Dom Perignon costs R2750, Veuve Cliquot R 750, Moet et Chandon R700, and Boschendal Brut R195. Brampton white (R25) and red (R28) is served by the glass.  White wines are by Lammershoek (R165), Ernst Gouws & Co, South Hill, Rickety Bridge, Seven Steps and Waverley Hills (R95).  Red wines come from the same wineries (R120 – R210), with the exception of Seven Steps, as well as Kanonkop Paul Sauer at R650.  The LavAzza cappuccino costs R17.

I was impressed by the classy feel of Valora, the smooth running of the restaurant on its fifth day, the creativity of Chef Andrew’s menu and food presentation, the wide choice offered, and the reasonable prices.  I was not charged for the Two Tone soup, Chef Andrew saying that he wanted me to try it.  Valora is a perfect spot to pop in before or after a concert or a show.  The service was attentive, and Lisa kindly went to have the menu copied at a nearby shop. Parking is a challenge during the day. The menu and beverage list contains a number of spelling errors. The business cards match the menu in gold and burgundy.  A cool unique touch was the stick of chewing gum which came with the bill, in a deep red wrapper with the Valora logo, although I am not sure if the Valora target market is into chewing gum!  I’ll be back to try more of Chef Andrew’s cooking creativity.

Batonage bloggers bubble at Food & Wine Bloggers’ Club!

The July Food & Wine Bloggers’ Club meeting, held at What’s On Eatery on Wednesday, was a bubbly affair, with Batonage bloggers Maggie Mostert and Hennie Coetzee sharing their passion for the good things in life, being eating out and drinking wine, and then blogging about it. Siris Vintners kept things bubbly too, by taking the bloggers through a tasting of five Moreson sparkling wines.  It was the first Food & Wine Bloggers’ Club meeting to be sold-out the day before the event.

Batonage is made up of two very passionate foodies and wine lovers, says its Blog introduction:  “Together we decided to create a record of our adventures in food and wine, something we indulge in almost daily.  We are avid wine hunters, always on the lookout for something new and unique to talk, write and spread the word about.  When it comes to food we consider ourselves adventurous eaters, scavenging the latest food and wine pairing at the best eateries, but equally happy to indulge in uncomplicated fare at our local bistro.  The focus will be on visiting wine farms and restaurants, both old and new, and telling you dear reader, of our experiences there.   Every attempt will be made to make the information relevant and we might even make you smile once in a while”.

What makes Hennie and Maggie interesting and unique is that their day job is far removed from their food and wine blogging, and that they write about both wine and food on the same Blog.  Hennie developed a love for wine whilst studying at Stellenbosch University, moving from financial management to wine sales, and ultimately, as sommelier at Singita, a leader in the accommodation industry. To become a sommelier, one must drink a lot of wine, he said, and he completed courses at the Cape Wine Academy.  While he learnt a lot about excellence in food, wine and service, the hospitality hours were not for him, so he has returned to the financial industry.  Maggie studied Accounting at the University of Stellenbosch, worked as a waitress at the Spur in Stellenbosch and did her articles, before setting up her own practice.  Her past experience as a waitress and her accountant’s perspective gives her a unique evaluation of restaurants and wineries. She advised bloggers to be honest ‘nicely’, and to write what they would be prepared to tell someone to their face.  Photographs and writing should not be ‘ho hum’, and one must spellcheck. She advised newer bloggers to attend functions, to eat out and drink a cross-spectrum of wine, and to discover new things.  Hennie advocated the drinking of sparkling wine on more than just special occasions, and even Champagne, when the occasion calls for it. 

Terence van der Walt is a wine merchant at Siris Vintners, a company established by Nigel Cattermole, and Willeen and Philip Burdell.   Terence took the bloggers through the Môreson MCC tasting.  Môreson was established in 1986, and first wines were bottled in 1994.   Clayton Reabow was appointed the winemaker in 2007, after studying at Stellenbosch University, and working at Grande Provence, Distell, Laroche L’Avenir, Vrede & Lust, Chateau de Fleur du Bouard, and in Zell.  We started with Miss Molly 100 % Chardonnay MCC Non Vintage, named after the Weimeraner at Môreson, and captures her personality and passion for life.  The wine label has braille on it, saying “I’m delicious”, and a portion of the sales is donated to the Guide Dog Association.    Solitaire MCC Non Vintage is a new release, with 24 month maturation.  Its palate is a fine mousse with well-balanced acidity complimented by biscuit and marzipan aromas.  Gala MCC Non Vintage has a balanced fruit-forward palate with good structured acidity, made from Pinotage (70%) and Chenin Blanc (30%) grapes, has a sweeter taste, and has matured for 24 months.  The One is Môreson’s first Vintage (2007) MCC made from Pinot Noir (60%) and Chardonnay (40%),  matured for 36 months in bottle, and described as ‘extra brut’.  It can only be bought from the farm, at R160 a bottle.  Pink MCC Non Vintage has strawberries and cream aroma and palate, is made 100% from Pinotage, and was matured for 12 months.

To demonstrate the principles of food and wine pairing, Maggie and Hennie had asked Trevor Jordaan of What’s On Eatery to prepare snacks that would pair well, and some that did not pair at all.   Hennie told us that food and wine pairing is not an exact science, but one’s evaluation of it is a subjective opinion.  It helps to know the acidity of the wine, and that of food, when deciding on a good pairing match.  He explained that sparkling wine is segmented into Brut (very dry), Sec (dry), Demi-sec (semi-sweet) and Doux (sweet).  The acidity in a sparkling wine prevents it from having too sweet a taste, Hennie said.  Some would advocate pairing an acidic dish with a bitter wine, or vice versa, but Hennie disagreed with this approach.   Neither of the two should dominate, and we smiled when Hennie said that food is masculine and wine is feminine. The Tempura prawns on avocado and papaya salsa, and smoked salmon and cream cheese wrap paired well with the Môreson MCC Miss Molly, good value in only costing around R25 a glass in restaurants.  The truffle infused cream on parmesan tuille was not regarded as a good pairing, the parmesan being too dominant.

The Food & Wine Bloggers’ Club was formed to reflect the tremendous growth in and power of food and wine blogs in forming opinion about food, restaurants and wines.  Most bloggers do not have any formal training in blogging, and learnt from others.   The Food & Wine Bloggers’ Club aims to foster this informal training, and to serve as a social media networking opportunity.  Each of the two bloggers talk for about half an hour about their blog, and what they have learnt about blogging.  The Club gives fledgling as well as experienced bloggers the opportunity to learn from each other and to share their knowledge with others.  Attendees can ask questions, and get to know fellow bloggers.  The Club meetings are informal and fun.

The Food & Wine Bloggers’ Club was formed to reflect the tremendous growth in and power of food and wine blogs in forming opinion about food, restaurants and wines.  Most bloggers do not have any formal training in blogging, and learnt from others.   The Food & Wine Bloggers’ Club aims to foster this informal training, and to serve as a social media networking opportunity.

Each of the two bloggers will talk for about half an hour about their blog, and what they have learnt about blogging.  The Club will give fledgling as well as experienced bloggers the opportunity to learn from each other and to share their knowledge with others.  Attendees can ask questions, and get to know fellow bloggers.  The Club meetings are informal and fun.

Restaurant closures sign of tough times in the Cape! Yet new ones opening!

It would appear as if the world-wide recession has only hit South Africa, and the Cape in particular, now and with a severe bang.  There is almost daily news of restaurant closures, three alone in the past three days, sad given how much the restaurants have invested in building a brand name and a regular following for their businesses.

The more than 100 restaurants in Cape Town and in the Winelands that are offering such generous Winter specials must be commended, and we will do our best to make their specials known to as many persons as possible.  We encourage our readers to do the same, to prevent any further closures.

We have created a new blogpost, with the restaurants opening and closing, and chefs moving, since spring 2011.

The following restaurants have closed down in the past few months, and these may not be the only ones as the winter takes its toll:

*  The Olive Shack in Franschhoek has closed its restaurant operation, and will only operate as a shop selling olive-related products.

But all is not doom and gloom, and the restaurateurs that are opening restaurants in these difficult times must be congratulated and wished well.  These restaurants opened their doors this year :

POSTSCRIPT 28/7: Pete Goffe-Wood, ex-owner of Wild Woods in Hout Bay, has written a frank article on Food24 about why he recently closed his restaurant. He blames Capetonians for not supporting restaurants in winter months, which means that they have to cover costs out of savings created in summer, to keep the business afloat in winter (this is a general Cape winter scenario for all businesses in the tourism industry – if one does not know about this, one should not be in the business in the first place!).  He writes that Johannesburg restaurants do not suffer this seasonality.  The recent 2-week summery spell proved what an important role the weather plays – business was booming for restaurants and accommodation as Capetonians left their homes, went out, and spent money, a welcome cash injection in these difficult times.  The Bastille Festival in Franschhoek had record attendance during this period.

Restaurant Specials cause cost undercutting, which attracts business and provides cashflow, but does not help the industry, he writes. If specials weren’t offered, one probably would have seen a far greater number of restaurants closing down. They are hugely popular, and on this blog the Restaurant Specials listings are the most popular of all blogposts.  He also blames restaurant owners, often chefs, for being too ’emotional’ about their businesses, and for not seeing the signs of tough times early enough, which may call for closing one’s restaurant.  Clearly opening any business at the moment is high risk, and for a hospitality business the risk is even higher.   Goffe-Wood also lashes out at the recent Weekend Argus article about Restaurant Closures, using names from this blogpost.  As much as he blames journalist Helen Bamford for getting her facts wrong, he does too, in calling her Linda!  Describing a non-renewal of a restaurant lease as not being a restaurant closure or failure is very debatable – if things were going well, leases would have been renewed, especially for a restaurant like Haute Cabriere, where Chef Matthew Gordon had operated for 16 years!
