of our country, and home to Ile de Pain, one of the best bakeries in South Africa. \u00a0It is a pity that beautiful Plettenberg Bay, and the fertile farming region of George, Sedgefield, and Wilderness were excluded.<\/p>\n<p>The episode opened with Hayden meeting Markus Farbinger, the Austrian baker who opened Ile de Pain a number of years ago on scenic Thesen Island, baking breads and pastries, which one can buy to take away or to enjoy in their coffee shop. \u00a0<a href=\"http:\/\/www.whalecottage.com\/blog\/wine-news\/de-oude-bank-bakkerij-transforms-and-expands-into-schoon-de-companje-in-stellenbosch\/\"><span style=\"text-decoration: underline;\"><strong>Schoon de Companje owner Fritz Schoon<\/strong><\/span><\/a> worked with Markus for a year, and learnt all he knows from Markus, before setting up De Oude Bank Bakkerij in Stellenbosch, now renamed. <span style=\"text-decoration: underline;\"><strong>\u00a0<a href=\"http:\/\/www.whalecottage.com\/blog\/accommodation\/hayden-quinn-south-africa-episode-2-behind-the-stellenbosch-boerewors-curtain-very-disappointing\/#more-59677\">Fritz featured in Stellenbosch episode 2 with Hayden<\/a><\/strong><\/span>, showing him how to bake mosbolletjies, and went zorbing with him at De Morgenzon! \u00a0Liezie Mulder is the chef and Markus the baker in their business, having a restaurant in the town centre too. \u00a0Markus had baked some lavash flatbread in his woodfired oven, which Chef<a href=\"https:\/\/i0.wp.com\/www.whalecottage.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quin-6-Knysna-Lady-in-orange.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignright size-medium 150px) 100vw, 150px\" data-recalc-dims=\"1\" \/><\/a>adding scrambled eggs, boerewors, and sheba, a salsa made from tomatoes, onions, garlic, cayenne pepper, red pepper, sugar, salt, and pepper. \u00a0 This was followed by a surfing <!--more-->expedition for Hayden and Markus at Victoria Bay, outside George.<\/p>\n<p>Hayden was then shown the Big Tree in the\u00a0Tsitsikamma Forest, which is a 1000 year old yellowwood tree, and which has a circumference of nine meters, and is about 36 meters tall. \u00a0The indigenous fauna and flora has been retained since SANParks took over the nature reserve in 1987, explained Richard Gewers, the People and <a href=\"https:\/\/i0.wp.com\/www.whalecottage.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quinn-6-Knysna-Big-Tree-Whale-Cottage.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignright size-thumbnail wp-image-60522\" alt=\"Hayden Quinn 6 Knysna Big Tree Whale Cottage\" src=\"https:\/\/i0.wp.com\/www.whalecottage.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quinn-6-Knysna-Big-Tree-Whale-Cottage-150x150.jpg?resize=150%2C150\" width=\"150\" height=\"150\" 150px) 100vw, 150px\" data-recalc-dims=\"1\" \/><\/a>Conservation Manager of SANParks in the region. \u00a0 With Stormsriver Adventures Hayden went on a Canopy Tour, moving from one platform to another on steel cables 30 meters above the forest floor, to enjoy the birdlife and scenery.<\/p>\n<p>Hayden stayed at the Turbine Hotel &amp; Spa on Thesen Island, which took three years to transform from the original town power station to the hotel, much of the original equipment having been retained as part of the hotel decor. \u00a0It opened in 2010. \u00a0Knysna&#8217;s timber industry was based on Thesen Island before it became an upmarket accommodation and entertainment area, Knysna&#8217;s Waterfront&#8217;s equivalent. \u00a0Off-cuts from the timber industry were used to fuel the turbine.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.whalecottage.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quinn-6-Knysna-Janine-Basson-Whale-Cottage.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-thumbnail wp-image-60523\" alt=\"Hayden Quinn 6 Knysna Janine Basson Whale Cottage\" onto the Knysna Lagoon with Hayden, and they talked about oysters, explaining that the baby oysters come from Algoa Bay after three months, and then are grown in oyster beds in Knysna. \u00a0 Oysters are Green-rated on the SASSI list. Janine explained the SASSI <em>&#8216;Fish for Life<\/em>&#8216; program, which allows fishermen to identify the fish they catch by sending a photograph and information about where they caught the fish to SASSI, having a useful research benefit too.<\/p>\n<p><a href=\"https:\/\/i0.wp.com\/www.whalecottage.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quinn-5-Knysna-people-table.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignright size-medium wp-image-60518\" alt=\"Hayden Quinn 5 Knysna people table\" src=\"https:\/\/i0.wp.com\/www.whalecottage.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quinn-5-Knysna-people-table-300x300.jpg?resize=300%2C300\" width=\"300\" height=\"300\" srcset=\"https:\/\/i0.wp.com\/www.chrisvonulmenstein.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quinn-5-Knysna-people-table.jpg?resize=300%2C300&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.chrisvonulmenstein.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quinn-5-Knysna-people-table.jpg?resize=150%2C150&amp;ssl=1 150w, https:\/\/i0.wp.com\/www.chrisvonulmenstein.com\/blog\/wp-content\/uploads\/2014\/08\/Hayden-Quinn-5-Knysna-people-table.jpg?w=500&amp;ssl=1 500w\" sizes=\"(max-width: 300px) 100vw, 300px\" data-recalc-dims=\"1\" \/><\/a>With The Heads in the background, Hayden prepared four ways in which to eat oysters, including lemon juice and black pepper; a tomato-based Thai sauce, including ginger, lime juice, coriander, and red chilis; rice wine vinegar with sesame oil; and soy sauce with chopped spring onions, and mirin, a Japanese condiment.
