‘Chefs who Share’ reaches for the (Michelin) stars at Lanzerac!

Chefs who Share Lanzerac 7 chefs 2 Whale CottageIt was a unique experience to meet seven chefs who have worked or are currently working at Michelin star restaurants (10 Michelin stars awarded in total) in Austria and Germany for breakfast at the Lanzerac on Tuesday.  While it was an early morning start, it was energizing being in the company of the ever-bubbly Barbara Lenhard and Florian Gast of Opulent Living, who had extended the invitation to a number of writers.

We were seated at one long table intermingled with the chefs, and a half way swopping of seats was clever too, so that we could get to chat to at least three of the seven chefs for a longer period of time.  Opulent Living, organisers of the charity Gala Dinner ‘Chefs who Share‘ in the City Hall this evening,  Chefs who Share logowelcomed the seven chefs, who had all flown in from Europe to Cape Town on Monday.

Tonight seven teams of two local chefs each, a local sommelier, and one of the German-speaking chefs, will prepare a four course dinner for 36 guests who have paid R3000 each to attend, a total of 250 guests not only eating delectable food, but also drinking excellent local wines, and interacting with the three chefs looking after their tables.  Last year Opulent Living raised R1,2 million through the charity Gala Dinner, and decided to raise the bar this year by flying in the seven German-speaking Continue reading →

Are there enough top chefs left to make up a credible 2014 Eat Out Top 20 Restaurant list?

Chenin Blanc Top 10 Huguenot Cheese Brulee Whale CottageIn the past week three further Top 20 Restaurant candidate chefs have announced their resignation, making the restaurants at which they work ineligible to be nominated for the 2014 Eat Out Top 20 Restaurant shortlist.  This year is the most volatile we have ever seen as far as top restaurant chef departures go, opening up the opportunity for a fresh 2014 Eat Out Top 10 Restaurant Awards list.

The latest chef resignations are the following:

*   Chef Oliver Cattermole left Mondiall Kitchen & Bar two weeks ago, today joining the Leeu Collection as its Executive Chef for its five star Dassenberg Estate hotel and Leeu Restraurants Oliver CattermoleRusthof Country House in Franschhoek, both opening next year.  Chef Oliver has worked locally at Dash at the Queen Victoria Hotel, the Le Franschhoek hotel, and Mondiall, as well as internationally at Ivy Restaurant, La Gavroche, Novelli, and at Cannizaro House hotel.

*   Chef Brad Ball, who helped open Bistro Sixteen82 at Steenberg, leaves in two weeks to start up what sounds like a collective of three restaurants at Pedlars on the Bend in Constantia

Musical stoves expected in the 2015 Eat Out Top 10 Restaurant list!

Waterkloof dessertWill the resignation of two 2014 Eat Out Top 10 Chefs, with  a third to come it is rumoured, make it the easiest hop into the 2015 Eat Out Top 10 Restaurant list ever?  While it is a bit early, we speculate as to which new restaurants will make it onto the Eat Out Top 20 and Top 10 Restaurant lists later this year.

Given the strict rule of an Executive Chef having to have worked a full twelve months (November 2013 to October this year) to qualify to get onto the Eat Out Top 20 shortlist, the three restaurants with the departing chefs will not qualify to make Top 20 for the judging in the next two months or so.  Hartford House and Pierneef à La Motte should definitely be off the list, and the third Top 10 restaurant will be confirmed shortly (see Postscript below).  Chef Chris Erasmus left Pierneef à La Motte a week ago, to open his new restaurant Foliage on the main road of Franschhoek next month, while Chef Jackie Cameron is opening Jackie Cameron’s School of Food and Wine in Hilton in January next year, but leaves at the end of July.  The third chef is rumoured to move from the Winelands to Cape Town, to open his own new restaurant, and could not be reached yesterday due to the restaurant being closed on Mondays and Tuesdays.   We would not be surprised if a fourth Top 10 restaurant chef makes a move to Cape Town too, given the number of new restaurants opening in the next few months. Top chefs go green, with some red and white, for Christmas this year!

Classic Wine Whale Cottage PortfolioI am proud of my first professional writing assignment, being an article in the December/January issue of Classic Wine magazine. about how five top chefs ‘Celebrate Green Christmas this year, with some red and white’. Each chef is an ardent supporter of the green movement, focusing on sustainability and seasonality, which is reflected in their Christmas menus. The Christmas menus are paired with fine red and white wines.

Eat Out Top 10 Chef Jackie Cameron will serve a lunch of memories to her guests at Hartford House tomorrow, based on her own Christmas memories and those of her kitchen team.  Her bread board, for example, will reflect the diversity of her team, consisting of Amasi curd called ‘Amaqueque’, with a new age spinach spoom, Indian chilli bites, ‘patta’ (a spicy mixture wrapped in amadumbi leaves, a true rainbow nation combination), Afrikaans mielie bread, and English health bread.  Tel (033) 263-2713

Delaire Graff Chef Christiaan Campbell is serving a magical Christmas Eve dinner at his restaurant this evening, and diners will be assured that the meat is pasture-fed, the fish is SASSI green listed, and that the vegetables and herbs will largely come for  the wine estate’s own garden.  Guests will be serenaded by an accordionist while they enjoy drinks outside, and entertained by a magician whilst having their dinner.
