Western Cape dominates Rossouw’s Restaurants 2012 3-star restaurant list!

JP Rossouw has published his latest restaurant guide, and has awarded his top 3-star restaurant rating to the following restaurants, 18 out of the 23 restaurants being located in the Western Cape:

Eat Out Top 10 Restaurant 2012 Awards: some predictions!

We have predicted the Eat Out Top restaurants in the past few years, and this year we are presenting three Eat Out Top 10 list options, based on Eat Out editor Abigail Donnelly’s potential approaches to selecting the award-winning restaurants, which she had rubber-stamped by now ex-judge UK blogger Bruce Palling!

The judging criteria are clearly specified on the Eat Out website: the restaurant must have operated for 12 full months (this is why The Pot Luck Club had to be dropped off the Top 20 list!), and the same chef must have run the kitchen for the period; the owners and the chef should show an absolute passion for their business;  they should be dedicated to uplifting the industry (an odd criterion, not being clear if this is meant to be staff upliftment, or sharing with chef colleagues?);  chefs should care about sourcing quality produce; and consistency and excellence must shine through every aspect of the business.  The judging score is out of 100, of which 70%  goes to Food, its website says, but the figures don’t add up, in that 15 points go to menu composition and seasonality (defined as ‘choice, cooking techniques, dietary requirements, local ingredients, choice of fish, out-of-season ingredients‘), 15 points go to presentation (defined as ‘visual appeal, fits description, use of plate, garnishes’), and 25 points go to taste (defined as execution of dish, balanced, flavours complimentary, texture’), totalling 55 out of 70.  The missing 15 points are not clarified, but some must be the non-food aspects, as they add up to 100!  In addition, wine is evaluated out of 10 points (defined as ‘choice, other beverages offered, staff knowledge, pairing and value for money‘), Value for money scores out of 5, Service is evaluated out of 20 (defined as ‘reservation, arrival, staff attitude and knowledge, specials, wine matching, dietary requirements, extra mile, billing’), and ambiance is scored out of 10 (defined as ‘comfort level, cleanliness, cutlery, music and bathrooms‘).

To recap, the following Top 19 Restaurants are in the running for the Eat Out Top 10 Restaurant list:

We called our first Top 10 Restaurant list the Taste Monitor, doing a count of the number of times a Top 19 Eat Out restaurant has been featured in Taste magazine this year, of which Mrs Donnelly is the Food editor, to show which chefs she is partial to.  It is no surprise that Chef Luke Dale-Roberts wins, having been featured in every issue, and he would be the only restaurant on the Top 10 list on this basis, all other Top 19 restaurant contenders having only been featured once or twice, if at all, in the past year. Advertising for La Motte, Delaire Graff, and Makaron restaurants has appeared in the magazine this year, as well as a promotion for Delaire Graff.

Another criterion would be the Trend to Foraging, Ethical sourcing, and Vegetable and Herb Gardening, and the following restaurants would feature on this list, in no particular order, based on our knowledge and what the restaurant websites claim:  Pierneef à La Motte, Delaire Graff, Overture, Babel, The Tasting Room, The Greenhouse, Planet Restaurant, Makaron, and Hartford House.

To compile the Top 10 Restaurant List, we have had to put ourselves into Mrs Donnelly’s shoes: she will have chosen her favourites and those that she has had links to, having shown her bias in judging restaurants this year and last year.  The hardest part is to decide which of her existing Top 10 favourites will have to fall off the existing Top 10 list to make way for others. No offence is meant by any exclusions, and is purely based on speculation:

*  The Test Kitchen – there is no doubt that The Test Kitchen will be named Top Restaurant and Luke Dale-Roberts as Top Chef, on the basis of the monthly shoot at his restaurant for Taste magazine alone. 74th position on The World’s 50 Best Restaurants list. Speaker at Eat Out Conference. Restaurant booked up to 3 months ahead. Oddly described as serving Tapas by Eat Out, maybe confusing it with The Pot Luck Club?

*   Pierneef à La Motte Chef Chris Erasmus showed that he strives for excellence in spending one month working at Noma, the world’s best restaurant, has the most fabulous vegetable and herb garden filled with unusual vegetables, herbs, and edible flowers, collegially sharing the produce with other restaurants in Franschhoek and Stellenbosch, has excellent wines on its winelist, and proudly focuses on local cuisine. Superb interior, reasonable value.  Culinary Manager Hetta Van Deventer-Terblanche is speaking at the Eat Out Conference, and La Motte has advertised in Taste magazine. Service deficiencies would lose the restaurant some points.

*   Makaron Restaurant Chef Tanja Kruger is a member of the SA Culinary Olympic Team, spent a month working at Michelin-star L’Apèrge restaurant in Paris this year, has a vegetable and herb garden at Majeka House, and sources meat from Farmer Angus at Spier. Mrs Donnelly was a consultant to the restaurant, designing its first menu last year, and named the restaurant the inaugural winner of the Boschendal Style Award 2011, making it a model Eat Out restaurant!  Sommelier Josephine Gutentoft adds to the quality offering. Good ambiance.  Placed advertisement in Taste magazine this year.

*   Babel at BabylonstorenConsultant Maranda Engelbrecht has created a restaurant that is booked out two months in advance, and has created a most unusual food concept of same-colour salads, consisting of fruit, vegetables and herbs, grown in their enormous French-inspired garden. Chef Simone Rossouw worked at a Dutch restaurant for a while earlier this year. Owner Karen Roos has impeccable decor taste, very less-is-more.  First wine vintage launched, and very Proudly Simonsberg wines.  Good value, service strained when busy.

* Tokara Chef Richard Carstens deserved a Top 10 place last year, but was shockingly left off the list, perhaps because there was a fear that he would not last at the restaurant. He has proven Mrs Donnelly very wrong. One of our most creative chefs, and constantly reinventing himself and his team.  Seasonal focus.  Exceptional presentation.  Very professional service, with sommelier service.  Winner of best Winelands Restaurant in Great Wine Capitals Global Network awards second year running.

*   The Greenhouse Chef Peter Tempelhoff is understated and low key, just getting on with what he does best. Own vegetable garden on the hotel estate, knowledgeable about wines, Chef Peter making wines with Adam Mason.  One of only two Relais & Châteaux Grand Chefs in South Africa, awarded to Chef Peter earlier this year. Named Top Eat Out Restaurant last year.  Service can be arrogant. Fun interpretation of restaurant name in dishes. Expensive. Sommelier service. Innovative 7-course Dom Perignon Tasting Menu introduced today.

*   La Colombe – Chef Scot Kirton worked with Chef Luke Dale-Roberts, and has proven that he can do it with his own team too.  Best winelist and sommelier in the country in Diner’s Club Winelist Awards this year.

*   DW Eleven-13 – we know that Bruce Palling flew to Johannesburg to judge the restaurant.

*  Delaire Graff Chef Christiaan Campbell has strong ethical food principles, sources from Farmer Angus, his own vegetable garden, as well as from La Motte, seasonal menus, good plating, exceptional setting with its view on to the Simonsberg, outstanding service, exceptional decor with artworks by top local artists, very expensive.  Placed advertisement and ran promotion in Taste magazine this year.

*   The Tasting Room – Best placed South African restaurant on The World’s 50 Best Restaurant list, even though it slipped badly to 57th position this year, Chef Margot Janse sourcing herbs and vegetables from the La Motte garden, and meats from Farmer Angus at Spier.  Very expensive. Service and wine list is criticised.  New decor by Chef Margot’s brother. Speaker at Eat Out Conference.  Loses points for banning customers.

We have excluded Bistrot Bizerca because of its move to new premises while the 2012 Eat Out edition was being printed; Terroir, Jordan Restaurant with George Jardine, and Rust en Vrede for being under the radar; The Roundhouse, for Chef PJ Vadas leaving during the course of the year, which should have disqualified the restaurant from being on the Top 20 list;  Hartford House and Restaurant Mosaic, for judge Bruce Palling not having visited, as far as we can tell from his Tweets;  Planet Restaurant, for not yet shaking off its hotel connection and what that entails, despite Chef Rudi’s impressive sourcing of produce and their excellent sommelier; and Overture, whose Chef Bertus Basson may have been burning the candle at both ends this year with his Amazink, Die Wors-Rol, The Ultimate Braaimaster, and consulting contracts.

We look forward to the Eat Out DStv Food Network Top 10 Restaurant Awards, to be held at The Westin hotel on Sunday evening.

Eat Out Top 20 Restaurant Finalist List: Stellenbosch and Cape Town tie for Gourmet Capital!

Eat Out has just announced its Finalist Top 20 Restaurant list, from which the Top 10 Eat Out DStv Food Network Restaurant Award winners will be chosen.  Seven each of the twenty finalist restaurants are from Stellenbosch and Cape Town, three are from Franschhoek, one is from Johannesburg, one is from KwaZulu-Natal,  and one from Pretoria.  Bruce Palling, UK food blogger and new right-hand judge to Eat Out editor Abigail Donnelly, has just returned to London after a 14 day and 25 lunch and dinner ‘feasting and tasting’ trip to South Africa, mainly spent in the Cape.

Our prediction of the Western Cape Finalists did not include Bizerca (odd selection as the restaurant is moving to a new venue next month) and The Pot Luck Club (the tapas restaurant of Luke Dale-Roberts)! The Roundhouse is a surprise entry to the list, as its Chef PJ Vadas left in March, and it is a shame that the creativity of Chef Gregory Czarnecki at Waterkloof has once again not been recognised. For the second year running Chef Reuben Riffel has not made the Top 20 list, his Robertsons and Rama endorsement no doubt costing him a standing in this list!  The Top 20 list is very predictable this year.

The Top 10 Eat Out Restaurant Award winners will be announced at a gala dinner at The Westin hotel on 25 November.

POSTSCRIPT 18/9: In speaking to restaurateurs today after the Top 20 Restaurant Awards Finalist List was announced, the following criticism about the list has been expressed:

*   The Pot Luck Club only opened in December 2011, and therefore it has not been open for a full twelve months, as the rules state.  We all know that Mrs Donnelly has a very soft spot for Chef Luke Dale-Roberts, but the same rules must apply to all.

*   Grande Provence Chef Darren Badenhorst worked alongside Chef Darren Roberts for more than a year, as did Chef Eric Bulpitt at The Roundhouse work alongside Chef PJ Vadas before he left. Grande Provence was not evaluated for the Top 20 list, while The Roundhouse was!  Last year Rust en Vrede had to sit out a year, when David Higgs left, even though Chef John Shuttleworth had worked alongside Chef David for more than a year.  This highlights how inconsistent the application of the rules is.

*   Eat Out Judge Bruce Palling flew to Johannesburg to have lunch at DW Eleven-13 on Saturday, but does not appear to have made it to Restaurant Mosaic in Pretoria or to Hartford House in KwaZulu-Natal.

POSTSCRIPT 19/9: It is ironic, if not shocking, that Mr Palling’s presence in the Top 20 Restaurant Award Finalist evaluation did not safeguard Mrs Donnelly from falling into the same trap of her bias in including The Pot Luck Club, which has not been operating for a full year. It appears that Chef Luke Dale-Roberts has withdrawn The Pot Luck Club from the Awards today, and we salute him for doing the right thing.  However Eat Out should never have selected the restaurant in the first place!  This is how Eat Out subsequently announced the withdrawal of The Pot Luck Club from the Top 20 list, stating that they will not replace the restaurant with another: Our original communication listed The Pot Luck Club as one of the nominees. However, on discussion with chef Luke Dale-Roberts, we discovered the restaurant only opened in December 2011, and not in November 2011. (One month short of the cut-off.) Therefore, as per our judging criteria, The Pot Luck Club is not eligible for the awards this year. Luke fully supports our decision and we wish him all the best with the restaurant for 2013!’

POSTSCRIPT 3/10: I met Werner Hayward, Brand Manager at New Media Publishing, at The Christian Eedes Chardonnay Report presentation yesterday, and we discussed the infamous new UK Eat Out Top 10 Restaurants judge Bruce Palling, and how he did not prevent the embarrassing error of including The Pot Luck Club into the Top 20 Finalist Restaurant List. He admitted that this had been a ‘stupid mistake’ by his company!

A-palling Bruce Palling in Cape Town to judge Eat Out Top 10 Restaurants!

New Eat Out judge, blogger Bruce Palling from the UK, has arrived in Cape Town to assist Eat Out Top 10 Restaurant and associated awards organiser Abigail Donnelly in selecting the top ten restaurants in the country and in ranking them.  He has barely set foot in the country, never having been here before, and he has attracted controversy already!

Palling is a rude Tweeter, and on Twitter yesterday afternoon he announced his arrival, having been to Clarke’s second hand bookshop on Long Street, and in having eaten springbok for lunch, commenting on its bland taste: Cape Town on a glorious sunny Spring day – and my first experience of Springbok – surprisingly mild…was expecting more depth of flavour...  A chef retaliated immediately: It’s not stag steaks stored in the deepfreezer for 3 years wrapped in wellington boots, boet”. Palling also Tweeted a comment which was criticised for its implied racism, by labelling a fellow guest on skin colour at the restaurant: Black guest excusing lateness@Cape Town restaurant: “Sorry but had to take taxi because my Ferrari cant make it over bumps at entrance here”. For that Tweet he was admonished too, including by Über-Tweeter Jane-Anne Hobbs.

Palling, who is being accommodated at the Taj hotel, will be visiting the Top 20 restaurant list, unless Ms Donnelly has already cut that list down to her Top 10, and he will assist her in ranking the list, and in choosing the winners in the categories introduced last year: Boschendal Style Award, Best Italian, Best Asian, Best Bistro, Best Steakhouse, and Best Country Style restaurant.  This is our prediction of where Palling can be expected to eat in potential 2012 Eat Out Top 10 restaurants in the next few days in the Western Cape (we have excluded Grande Provence, The Roundhouse, and Nobu due to chef changes, and other deserving restaurants at which the chefs have been at the restaurants for less than a year):

From Palling’s blogposts, of which variations are published in the Europe edition of the Wall Street Journal occasionally, one has learnt the following about his eating and drinking tastes:

1.   Local is lekker:  he wants to eat ‘native produce’ rather than it being imported  (e.g. ‘wallaby’ in Australia!)

2.   He is fond of wine, and it should be local and single varietal, and not blended

3.  His benchmark is Michelin-ism

4.  He is quick to describe food as ‘bland’

5.   He has a ‘boredom with egg-dominated dishes’

6.   He loves ‘Nordic’ (especially Swedish) cuisine

7.   He scoffs at molecular gastronomy, which he calls ‘pretend food’, and likes to be able to identify produce on a plate ‘rather than look at an inanimate mixture of textures and smears’

8.  He ‘cherishes food which exudes strong, not to say, disgusting odours’.

It will be interesting to see if Palling’s assistance to Ms Donnelly will make any difference to the Eat Out Top 10 Restaurant Awards results. Palling has already shown that he is a difficult and opinionated writer and judge, and a rude Tweeter.

POSTSCRIPT 5/9: Eat Out has just announced that it is hosting a weekend of food celebration from 23 – 25 November, with international chefs in attendance too: This is from their website:

On Friday 23 November, there will be an exclusive dinner with Massimo Bottura, chef at Osteria Francescana, number 5 in The World’s 50 Best Restaurants, the prestigious annual awards sponsored by S. Pellegrino and Aqua Panna.

On Saturday 24 November, for the first time ever, we’ll be hosting an Eat Out Conference at The Westin Cape Town on Cape Town’s foreshore. Speakers at the inspiring, interactive day include top international chef Massimo Bottura; Bruce Palling (Wall Street Journal critic, World’s 50 Best Restaurants judge, blogger and Eat Out 2012 judge); and British food designer Andrew Stellitano (check out his incredible food landscapes, sculptural pancakes and edible Louis Vuitton handbagshere). Local speakers include reigning Chef of the Year, Luke Dale-Roberts, and prominent members of the local food and restaurant community, who’ll join a panel discussion led by Eat Out editor and judge, Abigail Donnelly.

On Sunday, the winners of the 2012 Eat Out DStv Food Network Restaurant Awards will be announced at a glittering awards ceremony in the Grand Ballroom at The Westin Cape Town. A four-course meal will be prepared by top chefs, and the new Top 10 will be announced, along with the winners of the awards for best steakhouse, bistro, Asian, country-style and Italian restaurant, along with the Boschendal Style Award“.

POSTSCRIPT 9/9: Bruce Palling has been eating his way around the Cape, and the only clues that he is leaving is that he has eaten Springbok on more than one occasion, and he is Tweeting photographs of the wines he has drunk with his meals, which must be very frustrating for him, as he is a keen food photographer, but that would give the judging away!  His wine choice over the past five days has included Zorgvliet Cabernet Sauvignon (vintage not mentioned), Raats Cabernet Franc 2008, Hamilton Russell Pinot Noir 2010, Raats Cabernet Sauvignon 2009, Paul Cluver 7 Flags Pinot Noir 2008, and Luddite Shiraz 2006. He is seeking wines with less than 14% alcohol content, to suit his wife’s requirement, and has been asking for advice on Twitter, a sad reflection on the restaurants at which he has eaten not being able to advise him!  He has taken back his criticism of springbok in his Tweet on his arrival (see above), and Tweeted on Friday: “Take back Springbok being boring/bland – had 2 non sous vide versions which lean + voluptuous helped along by Raats Cabernet Franc 08”. No local chefs, with the exception of Oliver Cattermole, who is not in the running for the Eat Out Top 10 Awards as he has not been at Dish at Le Franschhoek for a full year, have interacted with Palling on Twitter.  Chefs Peter Tempelhoff (Greenhouse), Jackie Cameron (Hartford House), Gregory Czarnecki (Waterkloof), Margot Janse (The Tasting Room at Le Quartier Français), Scot Kirton (La Colombe), Tanja Kruger (Makaron), Eric Bulpitt (The Roundhouse), Marthinus Ferreira (DW Eleven – 13), and Tokara Restaurant are all following Palling on Twitter, perhaps hoping for a clue or two.  Further disparaging Tweets in reaction to our Palling blogposts have been posted by Palling, one of which was (unprofessionally) ReTweeted by Le Quartier Français’ The Tasting Room owner Susan Huxter).

POSTSCRIPT 12/9: Le Quartier Français’ The Tasting Room and McGrath Hotels’ The Greenhouse must be concerned about Bruce Palling’s attack on ‘Relais Chateau‘ (sic) on Twitter today, both hotel groups belonging to Relais & Châteaux.

POSTSCRIPT 13/9: One hopes that Bruce Palling’s restaurant judging is better than his a-palling spelling and photography. This was his Tweet from Biesmiellah last night: “Taking a break at Biedmiellah (sic) – Babotie (sic) and Denning Vleis (sic)”. Poor quality writing, especially from a ‘journalist’!

Eat Out DStv Food Network Top 20 Restaurant Finalists: a prediction

This year the newly-named mouthful of a Eat Out DStv Food Network Restaurant Awards will see a number of changes, and hence predicting a Top 20 finalist is harder, as a number of new award categories have been introduced, including that Eat Out editor Abigail Donnelly is the sole judge, which we have written about previously.  Today the Top 20 Restaurant Award finalists will be announced.

As we did last year, we have made a prediction of the Top 20 Restaurant shortlist, with a motivation, as well as indicated which restaurants will not make it this year.  We apologise for the very strong Western Cape bias:

1. Tokara: I firmly believe that Tokara in the Helshoogte Pass will be the number 1 restaurant this year, given the outstanding 13-course dinner which Chef Richard Carstens prepared on 30 July, in honour of the closing down of El Bulli on that day.  The chef and his team received a standing ovation, and Ms Donnelly attended, and expressed her admiration of it. Chef Richard never stands still, stretching himself and his team with new dishes.

2. The Test Kitchen:  Luke Dale-Roberts’ restaurant in the Old Biscuit Mill will be a close contender for the top crown, having been a number 1 winner whilst at La Colombe, and 12th on the San Pellegrino 50 World Best Restaurant Awards last year.

3. Pierneef à La Motte: This Franschhoek restaurant, with Chef Chris Erasmus, has consistently impressed with its creative interpretation of Winelands Cuisine, in a restaurant with outstanding decor and attention to detail, and prides itself on its quest for excellence.

4.  The Tasting Room: Making an annual Top 10 list appearance, and the only South African restaurant making the San Pellegrino World Best 50 Awards, this Franschhoek restaurant, with Chef Margot Janse at the helm, is what has given Franschhoek its gourmet status in the past, now challenged by Stellenbosch, as is evident from this list.

5.  Overture:  The Stellenbosch restaurant has a beautiful view on the Hidden Valley wine estate, and an energetic, continually renewing Chef Bertus Basson.  On the Top 10 list since it opened.

6.  Planet Restaurant: The refurbished and modernised ex-Cape Colony restaurant at the Mount Nelson Hotel is headed by Chef Rudi Liebenberg, a previous Eat Out Top 20 finalist.

7.   The Round House: Despite its arrogance, the restaurant has two excellent foraging chefs in the kitchen, being PJ Vadas and Eric Bulpitt (ex-Jardine).  The restaurant is a previous Eat Out Top 10 winner, but did not make it last year.

8.  Nobu:  This One&Only Cape Town restaurant’s inclusion is uncertain, as it also deserves to win the newly introduced Best Asian Restaurant Award.  It is not clear whether a restaurant can be eligible for participation in both categories.

9.  Bosman’s: After a long absence, this Paarl-based Grande Roche Hotel restaurant featured on the Eat Out Top 10 list last year.  Great work is being done to make the restaurant more accessible, through an amazing summer special. Chef Roland Gorgosilich has been in the kitchen for a number of years.

10.   The Food Barn:  This Noordhoek restaurant is quietly making a good name for itself, its owner and Chef Franck Dangereux having been a Eat Out Top 10 chef in the past.

11.  The Greenhouse:  Reports about Chef Peter Tempelhoff’s creativity at the Cellars Hohenhort Hotel are very positive.  He has featured on the Eat Out Top 10  list in the past, whilst at Grande Provence.

12.  Terroir: This restaurant on the Kleine Zalze estate has been on the Eat Out Top 10 list for a number of years, with Chef Michael Broughton.

13. Jordan Restaurant with George Jardine:  The Chef and owner has featured on the Eat Out Top 10 Restaurant list whilst he was at Jardine, and also last year for his new restaurant.  Consistent delivery on his creative food, and baking specialist.

14. Aubergine: The only current Eat Out Top 10 restaurant in Cape Town, and owned by Chef Harald Bresselschmidt, having been on the Eat Out Top 10 list for many years, but then fell of the list for a number of years too, until last year.

15.   Delaire Graff:  The restaurant is known for its good service and beautiful views, and Chef Christiaan Campbell and his team quietly get on with what they are good at.

16.   Waterkloof:  The Somerset West restaurant, with Chef Gregory Czarnecki, has an excellent view, interesting architecture, and good presentation.

17.  The Restaurant at Grande Provence: Another low key restaurant, this Franschhoek restaurant has featured on the Eat Out Top 10 list twice, with chefs Jacques de Jager and Peter Tempelhoff.  Chef Darren Roberts is passionate about cooking, and creates beautifully prepared and plated fare.

18. Reuben’s One&Only Cape Town: This restaurant could also be eligible for inclusion in the Best Bistro category.  At best a token inclusion on this list.

19.  Hartford House:  This KwaZulu-Natal delivers consistently, and has been a regular on the Eat Out Top 10 list in past years, with passionate ‘local is cool’ Chef Jackie Cameron.

20.  DW Eleven-13:  This Johannesburg restaurant, with Chef Marthinus Ferreira, made its first appearance on the Eat Out Top 10 list last year.

Restaurants that will not appear on the Top 20 shortlist, we believe, are the following:

1. Rust en Vrede: Due to the departure of David Higgs, the new Chef John Shuttleworth has not run the wine estate restaurant kitchen for a full year, a criterion for the award.  Number 1 Eat Out Top 10 Restaurant last year.

2.  La Colombe:  Chef Scott Kirton probably needs some time to settle in, having worked with Luke Dale-Roberts previously.

3.  Reuben’s Franschhoek: The opening of the Reuben’s One&Only Cape Town was at the expense of this restaurant, a previous Top 10, and even number 1 restaurant on the Eat Out Top 10 list.

4.  New restaurants Dash, Casparus, Johan’s @ Longridge, and De Huguenot have not been open for twelve months, and therefore will not be eligible yet.

The Eat Out DStv Food Network Restaurant Awards will be presented at the Rotunda at the Bay Hotel on 20 November.  Last month the American Express Platinum Restaurant Awards were announced.  JP Rossouw’s annual restaurant star award list has not been announced yet.  It is interesting to hear that Spill Blog is planning to organise a new Restaurant Award next month, with potential funding by Cape Town Tourism, it is said.

POSTSCRIPT 5/10: The Top 20 Finalist list has just been announced (11h30):  We had 15 of the 20 finalist correct.  Our prediction of Aubergine (a surprise!), Delaire, Waterkloof, Reubens at the One&Only Cape Town, and The Food Barn were incorrect, not making the short-list.  Five restaurants we did not have on our list, that are short-listed, are Azure at the Twelve Apostles, Babel at Babylonstoren, La Colombe, Roots in Gauteng, and Restaurant Mosaic at Orient in Pretoria.

POSTSCRIPT 13/10: Eat Out has presented an informative profile of each of the Top 20 chefs in its newsletter today.

POSTSCRIPT 23/10: Tony Jackman has written critically in the Weekend Argus about the Eat Out Top 20 Finalist List.  He believes that new restaurants should not be included in such a list before they have not been open for two years.  He questions the wisdom of not including Rust en Vrede. He believes that longevity of a restaurant should be taken into account.  He is very critical about the 16 Cape restaurants on the list, compared to only 4 for the rest of the country.  He wonders whether the geographical balance of the list would be the same if the publishers of Eat Out were based in Johannesburg, and says there should be more balance, given that it is a national publication.  He highlights that none of the three Reuben’s are on the list.  Interestingly, he questions how long Luke Dale-Roberts will stay in his current location.  He raises the question as to whether great restaurants can remain great, irrespective of the chef, mentioning La Colombe and Bosman’s as examples of restaurants not influenced by who is the chef, and suggests ‘let’s lose this cult of the chef perosnality‘, adding ‘The restaurant should be the point – not the chef’.   Jackman mentions every Top 20 finalist, with the following exceptions: Richard Carstens from Tokara, and Margot Janse from The Tasting Room.

Passionate Toro Wine and Antipasti Bar bullish about future!

I admire any business owner opening in these difficult times.  Refreshing is the opening by two 20-somethings of Toro Wine Lounge and Aperitif Bar in De Waterkant, in the space once housing the luxury crockery brand Villeroy & Boch in the old Cape Quarter.  Toro is a chic comfortable wine lounge and bar serving more than 30 wines by the glass, as well as a range of Italian-inspired antipasti.

Three weeks ago Matteo Conti and Grant Lynott opened Toro, meaning ‘bull’ in Italian, realising their dream to start a business together which would involve food and wine.  The two co-owners are hands-on, a yin-yang team, with Grant the more introverted partner, and Matteo oozing Italian confidence.   What they lack in experience in running a business, they more than make up in passion for their new project.   Ideas had led them from a deli, a whisky bar, to finally the idea of opening a wine bar where they could drink wine and enjoy Italian food.  They couldn’t find one anywhere, and therefore decided to open their own. 

Matteo studied art direction, photography and marketing at the AAA School of Advertising, and has been involved in marketing his mother Renate’s guest house and restaurant Klein Olifantshoek in Franschhoek.  Four years ago he was in our school lift club in Franschhoek, and he has come a long way since his Bridge House School days, so much so that I did not recognise him when I arrived.   Grant met Matteo, and shared a room with him whilst a first year at the University of Stellenbosch, but he realised that this is not where his passion lay.  Matteo advised Grant to study at The Culinary Academy on Backsberg wine estate, run by Chef Ronan Boucher.  Over weekends Grant worked at La Bri wine estate in Franschhoek, and so developed his knowledge of and love for wines.  He also spent weekends at Matteo’s home, and this led them to brainstorm ideas for a joint business future together. Finishing at the culinary school, Grant went to Overture, where he worked as pastry chef, making breads, preserves and pastries with Chef Bertus Basson.  After a year he realised that 18 hours of fine dining food preparation per day was not for him.   He moved to La Boheme in Sea Point for a short while, until he and Matteo got together for their new project.  Grant’s favorite restaurant, without hesitation, is Jordan Restaurant with George Jardine,for the smokery, his cheese room, and for his amazing breads.  For Matteo it is Delaire Graff, with its beautiful scenery and excellent food.

An interesting ‘family tree’ of wines was created for the Wine Bar by a design friend of Matteo’s, and depicts the linkages between different grape varieties.  Comfortable brown leather couches create the homely ‘wine lounge’, but there are black tables with black leather chairs too, as well as seating outside. Toro sells a range of crystal decanters costing R400. Over time they may add further wine-related products.  The wine list has about 30 wines, all available by the glass, and none would be found in a  supermarket.  Grant and Matteo visited wine farms in Wellington, Franschhoek, Paarl and Stellenbosch before opening, and chose special and interesting wines, all costing R100 – R200, and R25 – R35 per glass.   They have a flat screen TV with a list of their wines, but they told me that most of their wines are sold on their recommendation.  Popular white wines have been Warwick’s Professor Black and Darling Cellars’ Lime Kilns, and red wines selling well have been La Bri Cabernet Sauvignon and Shiraz Viognier, as well as Vondeling Petit Rouge and Baldrick Shiraz.  Some customers are looking for information about the wines that they drink.  If the wine representative shares the information about their wines passionately, Grant and Matteo say they can sell it more passionately to their clients.  On the back-lit shelving Matteo has some wines and wine packs on display, including some special Meerlust Rubicons of 2001 and 2002, which he will not easily sell.  Coffee is by LavAzza.

Good cutlery, a material serviette, the most beautiful crystal wine-by-the-glass and water decanter (I bought one for R110), as well as a silver sugar bowl impressed, adding class to Toro.   The Antipasti is excellent value for money, and one can chose one’s own selection from a black menu.  Imported cheeses are Brie, Camembert, Teleggio, Manchego, Parmigiano and Gorgonzola, costing R15 each.  The Charcuterie selection includes Mantanara salami, parma ham, chorizo, coppa ham and Black Forest ham, each costing R15.  I chose the Brie and Camembert, and it was served with Grant’s home-made onion chilli salsa with a bite, plum cardamon jelly, grapes, fig preserve, and delicious sunflower rye bread from Jason’s Bakery in Bree Street.  The Pickle and Preserve Experience costs R50, and is served with Grants’ home-made preserves and pickles, including onion chilli salsa, candied aubergines, fig confit, plum cardamon jelly, passion fruit coulis, pickled olives, jalapenos and baby cucumber, and marinated peppers.   The Gratin also costs R50, and changes daily.  Yesterday it was a choice of Tagliatelle with macadamia pesto, chicken marinated in coconut milk, pink pepper corns, and gratinated with Manchego cheese.  Bruschetta options were Truffle artichoke heart, and Pizzaiola (mozzarella cheese, basil, and tomato), at R40.  A Bar Snack board costs R80, and includes chilli poppers, chipotle salsa, jalapenos and biltong.

An innovative service for lucky De Waterkant residents and businesspersons is a daily Box Lunch delivery service, from 11h30 – 14h30.  Costing R50 and presented in a neat sturdy carton container reflecting Matteo’s art background, it contains an Insalate house salad of the day, a choice of Panino (tuna and lemon ailoi, roast beetroot and fromage blanc, roast chicken with smoked mozzarella, or honey glazed ham and mature cheddar), a trio of freshly baked cookies, and a 250 ml bottle of San Benedetto mineral water.

Having been to Toro twice in two days, I am impressed with the professionalism of the running of the Wine Bar, the passion of the two owners, the presentation and excellent value of the antipasti, the vast selection of good value wines, the free wi-fi, and the welcoming homeliness of the Toro.

‘Taste of Cape Town’ offers a taste of Cape Town and Winelands restaurants

I have enjoyed attending the Taste of Cape Town, run in our city for the past four years, and the first one in Camps Bay, as well the one in Mowbray last year, were particularly enjoyable in respect of the large number of diverse participating restaurants and wine estates, as well as easy and ample parking.

Every year the venue has changed, and this year the Restaurant showcase will be held at the Green Point Cricket Club.  Inexplicably, the dates for the event were moved from April, which would have meant better weather, to today until 8 May, and no wine estates are on show, compared to their presence in the past years.  The ‘Taste of…’ showcases are held in major cities around the world, and the one in Cape Town has been organised by Justine Drake since its inception. 

The 14 participating restaurants are Bistro Sixteen82 (Chef Brad Ball serving sticky five-spiced free-range pork belly); Il Leone Mastrantonio (its chef Daniel Toledo serving a selection of Italian specialities);   Jordan Restaurant with George Jardine from Stellenbosch (Eat Out Top 10 George Jardine will offer barrel-smoked kingklip fettucine, Chalmar sirloin, foie gras bourguignon, as well as a buffalo milk yoghurt mousse with Valrhona chocolate); Nobu from the One&Only Cape Town (serving yellowtail sashimi, pork belly with spicy miso, and Japanese halibut with den miso); Pierneef à La Motte’s chef Chris Erasmus will offer Cape Bokkom salad, smoked lamb’s rib with pickled tongue, dried pear dumplings and verjuice poached pear, and milk tart;  Simply Asia;  Wang Thai;  Societi Bistro; Planet Restaurant at the Mount Nelson with Chef Rudi Liebenberg; GOLD; Taj Cape Town; Fyndraai Restaurant from Solms Delta, with chef Shaun Schoeman; and Savour Restaurant at 15 on Orange. 

One can try three dishes at each stand, and one uses crowns to the value of R5 to pay for the dishes, each dish having a different crown value.  Additional attractions are the Eat In Small Produce Market, which will have Buffalo Ridge mozzarella, preserves from Oded’s Kitchen, Tasha’s fudge, La Petite France camembert, and Willow Creek olive oil to taste, amongst others.   Pick ‘n Pay’s Fresh Living Theatre Chef’s Theatre will offer chef’s demonstrations, including Pete Goffe-Wood talking about SASSI, and one can learn how to make canapés at the Pick ‘n Pay Wine & Canapé Experience.  The Grolsch Beer Academy and the Johnnie Walker Whisky Theatre will offer liquid refreshments.

POSTSCRIPT 8/5:  After struggling to find parking anywhere reasonably close by on Friday evening, we went to the Taste of Cape Town yesterday at 13h00, a good time as far as parking went, but a day-time visit with relatively fewer people did not have the same magic as all my previous evening attendances, mainly because one enjoys bumping into other foodlovers.  I was impressed to see so many top chefs hands-on in their food preparation, in what must feel like a production line for them, being George Jardine of Jordan Restaurant, Stefan Marais of Societi Bistro, Chris Erasmus of Pierneef à La Motte, and Brad Ball of Bistro Sixteen82. 

I spent my R100 on 20 crowns on Jordan Restaurant’s Aged Chalmar sirloin and foie gras bourguignon (left), on Bistro Sixteen82’s Sticky five-spiced free-range pork belly with salted caramel and apple celeriac espuma (right), as well as on Societi Bistro’s chicken liver parfait on toast with pineapple chutney.  I was surprised to see a number of wine estates exhibiting as well, not having seen any information about them on the website:  Arumdale, De Wetshof, Hermanuspietersfontein, Idiom Wines, Neil Joubert, Noble Hill, Peter Falke Wines, Quion Rock, Rickety Bridge, Steenberg, Thelema, Van Loveren, Wedderwill, and even Jorgensen Distillery, which is on the list but which I did not see. There was a stand for Whale Tale Ale, which I had never heard of before, but which I must connect with.

The Eat In Small Producers’ Market was spread over two tents, and they are a little lost, not being in the flow of the restaurants and wineries.  I enjoyed meeting Wayne Rademeyer of Wellington’s mozzarella producer Buffalo Ridge, Tina Bester of the Queen of Tarts, tasted excellent frozen yoghurt from an aptly named Scoop, and was impressed with the fresh organic vegetables from The Drift, owned by father and son team David and Bruce Jack of Flagstone Wines.

The new Jordan 2009 The Outlier Sauvignon Blanc and 2008 The Prospector Syrah were launched to about sixty invited bloggers and/or Twitterers at the Jordan Wine Estate on Monday, and the launch was celebrated with a superb outdoors three-course meal prepared by Eat Out Top 10 Restaurant chef George Jardine, of Jordan Restaurant with George Jardine. 

Gary Jordan’s background as a geologist is reflected in the names of the two new wines.   The 2009 The Outlier Sauvignon Blanc was made from a single vineyard Sauvignon Blanc located on the highest and coolest spot on the wine estate.  Jordan explained the origin of the ‘Outlier’ name, by explaining that it is a phenomenon which is outside of the norm, in scientific terms.  The ‘Outlier’ predecessor vintages, previously named Jordan Blanc Fumé, have been highly regarded, and the 2008 vintage received a Gold medal and Best in Class at the International Wine and Spirit Competition, thus deserving the new ‘Outlier’ name. Geologically, an outlier is “an outcrop of rocks that is entirely surrounded by older rocks”, Jordan explained.  “The quartzite formation underlying the Sauvignon Blanc vineyard used for this wine is surrounded by older (600 million years old) mineral-rich granites”, he added. It is the barrel fermentation of this Sauvignon Blanc that puts it into ‘a different class, a true outlier’.  The cooler location of this vineyard makes the grapes ripen up to three weeks later than the other Sauvignon Blanc vineyards at Jordan.

The new 2008 The Prospector Syrah also has an interesting background.  Recently Jordan Wine Estate was one of the leading estates that put an end to plans to mine for minerals on key wine farms in the area.  The Jordan Syrah vineyards contain traces of tin as well as other minerals, going back to the gold rush of the 1800’s, and it is the minerals that give the Syrah a particular characteristic: “rich, dense, dark chocolate, black fruit and fynbos flavours interlaced with white pepper.  Barrel fermentation adds toasty nuances to the richly textured structure”.  As a Shiraz lover, The Prospector Syrah ‘spoke’ to me.

To reflect the geological theme of the new wines, small stones from the estate decorated the tables.  Each guest presentation pack had a small pouch with a very shiny stone in it, demonstrating the minerality of the soil at Jordan.

Guests were spoilt by the craft of Chef George Jardine.  Served on his trademark slate plate was a square of ‘barrel smoked pole caught yellow fin tuna, miso charred aubergine’, which was paired with the Jordan The Outlier.   I ate the starter with Chef George’s wonderful wholewheat bread, which his wife Louise generously gave me a loaf of when I asked her if she had one to sell.   The main course was a pan roasted blesbok, served with foie gras and a bourguigon garnish.  This course was served with the Jordan The Prospector.  The dessert was French imported Valrhona guanaja chocolate royaltine, which was served with Jordan Mellifera, a lovely dessert wine, and with a good foamy cappuccino. 

Kathy Jordan was a lovely table hostess, and I enjoyed the company of Allan Mullins of Woolworths, Hennie Coetzee and Maggie Mostert of Batonage blog, and a UK couple who are regular guests at High Timber, the restaurant which the Jordans co-own in London.
