S.Pellegrino Young Chef 2016 competition international judges include Chef David Higgs!

For the second year the S.Pellegrino Young Chef competition will be held, and entries for 2016 open on 1 January.

Last year the competition attracted 3600 entries from around the world, and was won by Mark Moriarity from Ireland. He said that ‘it was an unforgettable trip (to Milan) and an experience I will never forget. I met so many amazing chefs and the title really made a difference to my career’. Africa and Middle East was represented by Angelo Scirocco of Chef’s Warehouse & Canteen, after a cook-off in Cape Town against other talented young local and Middle Eastern chefs.

The panel of seven judges includes Chef David Higgs, currently of five hundred, and opening his new unnamed restaurant in Johannesburg next March. Other judges are Chefs Carlo Cracco, Mauro Colagreco, Gaggan Anand, Elena Arzak, Wylie Dufresne, and Roberta Sudbrack.

Young chefs between 18 and 29 years can register their application online, submitting a signature dish on FineDiningLovers.com. Finalists will be selected on the choice of ingredients, cooking skills, genius, beauty, and message transmitted. Ten finalists will be selected per region to compete in the Finals, with a cook-off between 1 May and 15 August. The winning regional Finalist will be mentored (Chef David Higgs played this role for Angelo earlier this year), to help improve the winning dish.

The twenty winning dishes from twenty regions around the world will be evaluated by the judges in Milan in October.
