I love eating cake but am not a Cake Baker by any means.
Yet my eye caught an article about the Pudding which won The Platinum Pudding Competition in honour of the Platinum Jubilee of Queen Elizabeth II.
The Competition was created by Fortnum & Mason especially for the Platinum Jubilee celebration.
A total of 5000 entries was received for The Platinum Pudding Competition in honour of Queen Elizabeth’s 2022 Platinum Jubilee, which was narrowed down to a top 5 with difficulty.
The winner of the Platinum Pudding Competition is Jemma Melvin from Southport, with her Lemon Swiss Roll and Amaretti Trifle. Jemma is a copywriter, and started baking at a young age, inspired by her grandmothers. Doing her homework, Jemma discovered that Queen Elizabeth had lemon posset at her wedding, so her Pudding had to have lemon in it. To lift the quality of the Pudding, Jemma decided to add Amaretti and Mandarin.
Ingredients that went into the Trifle were home-made lemon custard, Amaretti biscuits, Mandarin coulis, White Chocolate shards, lemon curd, St Clement’s jelly, candied peel, and whipped cream.
Jemma’s Platinum Pudding Trifle was served at Big Jubilee Lunches yesterday, and is set to become part of British food history.
