Highly regarded Chef David Higgs, heading up the kitchen at Marble and the newly opened Saint, both in Johannesburg, is to launch his first cookbook ‘Mile 8 by David Higgs: A book about cooking’ in October.
The title of the book relates to a mile marker along the Namibian coastline, north of Swakopmund, Mile 8 being a special place where Chef David caught his first fish and where his food journey began. The book tells the story of his journey, growing up in Walvis Bay, working in the ‘cowboy kitchens’ of Cape Town, moving to the Winelands where he took Rust & Vrede to the number one slot on the Eat Out Top 10 list before his surprise move to Johannesburg, building up Marble in Rosebank as co-owner, and having opened Saint restaurant in Sandton on Monday.
The book also includes 90 dishes and 150 recipes, including such unique Southern African dishes as Impala Tartare, Snoek and apricot, Amadumbe and chakalaka, as well as his interpretation of the classic Malva Pudding.
The book launch is planned for October, and the book will cost ‘approximately’ R550, according to the media statement. Pre-orders of ten books or more are available at R45o each, and can be ordered from Marble via its website www.marble.restaurant or by emailing stef@marble.restaurant. The Marble Group is listed as the publisher.
