Babylonstoren has launched its first MCC, four years after harvesting its first Chardonnay grapes. It has been named Sprankel.
The sparkling wine was matured on the lees for four years before disgorgement. Winemaker Charl Coetzee has not made a sparkling wine before. He said: ‘I’m glad we were patient, because the four years have really made all the difference. Keeping it on the lees has added layers and layers of complexity’. There was zero dosage, making Sprankel ‘ultra brut’.
‘After tasting this wine again and again over the past four years we decided it is just perfect as it is. It’s a layered wine that’s still very fresh. You don’t get the impression it’s an aged wine at all; as there are lots of primary flavours upfront on the palate‘, added Coetzee.
The butterfly label design is by Peet Pienaar.
A limited production of only 500 bottles is available from the Babylonstoren Tasting Room and restaurants, at R495 per bottle.
