It was a surprise to read that Chef Peter Tempelhoff is to open his second restaurant beyond, at Buitenverwachting in Constantia. This follows the success of his Fyn restaurant in the city centre, which he opened two years ago. He is to open a Street Food restaurant on Shortmarket Street sometime soon too.
Chef Peter has not revealed many details about beyond, as to the opening date, and where exactly it will open on the wine estate. But we do know the name of the Chef heading up the kitchen as well as that of the interior designer of the new restaurant, who also designed the FYN interior.
Chef Peter writes about his new beyond restaurant:
’Our new restaurant concept, beyond, at Buitenverwachting wine farm, came with the dual challenge of offering you, our loyal patrons, something fresh, while acknowledging the estate’s centuries of history. We believe the answer to this challenge is best answered by way of a light touch and uncompromising standards as far as ingredients go. Indeed, if I could choose a quote to sum up the philosophy behind the food at beyond, it would be something Marco Pierre White once said: “Mother nature is the artist, we are just the cooks.”
Sustainable and seasonal produce and a respect for provenance will inform the menu, and my team will craft these seasonally significant flavours into a memorable culinary experience. Expect food that comforts and nurtures, served à la carte, to old-fashioned service standards.
I’m joined in this exciting new journey by core members of my stellar team at FYN, Culinary Director Ashley Moss and Head Chef Julia du Toit, who will now serve as Head Chef at beyond. Du Toit’s vision includes a paring back of food to its essence. “We have become so used to trying to fuse flavours together that we have forgotten how to keep things simple. That’s what we want to bring back at beyond – simple, elegant food that’s still packed with flavour,” she says.
The setting will echo this and we hope the idea of a fresh take on tradition comes through in the simple, elegant interiors. A contemporary and casual, but refined space, conceived by Tristan du Plessis, beyond’s setting is as timeless as the menu and echoes the elegance of the dishes. Wine too, will tip its hat to history, and Jennifer Hugé (a long-time colleague of mine), cites the Constantia Valley as her inspiration for the masterful selection.
