Meet Chef Prim Reddy of Indian Chapter: 2021 Top 10 Woman Chef!

Chef Prim Reddy of Indian Chapter in Bloubergstrand is a 2021 Top 10 Woman Chef, and wins a bottle of Adhara Premium Extra Virgin Olive Oil.
Chef Prim has published an award-winning Cookbook ‘Temptations’ with Chef Niranj Pather, a blend of Mediterranean and Indian dishes.
Chef Prim is ambitious, and dreams of a second Book and expanding her Indian Chapter brand into the city. As a fellow Sagittarian I know that she will achieve these goals and more.

Cape’s Top 10 Women Chefs of 2021 announced on Women’s Day!

 

Chef Prim grew up in Durban, her parents owning a spice shop.  Her dad brought her up to be Extraordinary, ordinary not being good enough. She obtained her BA Communications degree, which she topped with an MBA. She moved to Johannesburg, into the Broadcast world, as a continuity announcer and a Cooking Show presenter, on various TV channels and radio stations. By luck she moved to Cape Town 14 years ago, working in the corporate world at Foschini initially, until she realised her dream of opening her own restaurant nine years ago. She was  asked which dish represents the Lockdown, and she replied a Paella, for her a dish of sharing and caring.
Chef Prim shared her Lockdown highs and lows, and future plans:
1.  What is the best thing about the Lockdown for your business/your cooking  ?
‘Lockdown has been greater than any education or experience I received. It put things into ‘perspective’ & ‘purse-pective’. Imagine looking at a pool of ingredients which was once part of an ocean of the same & you create something that still sends your tastebuds on a rollercoaster. I developed a new respect for Lemon juice & Himalayan Salt & my old friend Mr Cerebos were like jewels in my culinary crown & finally beautiful plain yoghurt was like the richest moisturiser that lined so many beautiful ingredients😄. ‘
2.  What is the worst thing about the Lockdown for your business and your cooking ? 
‘I missed our guests, they are my family now. We kept the communication alive with the team & we had our own Think Tank often. The worst thing was not knowing. We didn’t understand this Corona that either touched or took away so many people close to us. We pray together often & celebrate the little things. It’s never going to be normal again, it’s a new normal & we had to adapt. We did & now we ready to embrace it all still not taking anything for granted. 
3.  Are you planning to change anything in your business /cooking for the year ahead. 
‘Aaaah…. 💃🏻💃🏻💃🏻💃🏻. Yes, an epiphany one Monday evening. A concept so novel & refreshing, a flavour so intense, a food that is so unique in its offering, happy, fast, festive & packaging that is cost effective. The decor is simple & the energy makes it too fabulous to discount in any way. Take-away, delivery via the celebrated platforms or our unique mobile vehicle where you hear us coming before we arrive. Standardised flavour, accessibility of ingredients so even for a Central Kitchen, every aspect has been factored in. Brian Joffe has been my inspiration & I sincerely hope he’s ready for my visit. He’s going to be blown away ‘
4. Tell us more about your Book Award? 
Niranj & I won the Gourmand Award for ‘Best New Cookbook in the World’. We couldn’t believe it. 
She’s a great girl & we still haven’t truly celebrated this accolade but coming soon.  Penguin was a pleasure to work with & Beverley Dodd is amazing. Another book on the cards & this time with a different hat & different chapters. Exciting times ahead & if this is what we can do during Lockdown & make the best of it, imaging what’s going to happen when the best is head ❤️🙏🏽.
